Make your own coconut butter?

Has anyone tried this? I was searching online yesterday and came across a recipe blog (not low carb) that said all you need to do is process unsweetened shredded coconut in a food processor for 6 - 10 minutes. Not coconut flakes, as they are dried. Keep scraping the sides down, and if needed add a little coconut oil to thin it out.

I am going to try it out. I like the idea of getting the healthy oil, plus the added benefit of the fiber from the coconut meat. Obviously you need to really LOVE coconut, which I do!

I imagine that this would be less expensive that coconut butter, which is super pricey.

I've made it with my Kempo Green Power juicer, which separated the fat from the pulp.

I've done this too. It takes longer than 10 mins. or it felt like it.

I use my VitaMix for this. Also, if you are near an Indian Supermarket, buy Coconut POWDER and it will work much faster (and it's cheaper, too).
