Chicken Club Stack
A little low-carb take on a classic chicken club sandwich
1/2tsp dijon mustard
shake of cayenne pepper
Mix and set aside
2 strips bacon (fatty is good here)
1 boneless, skinless chicken breast, pounded kind of flat but not too thin, salt and pepper as you like
1 thin slice deli ham (your favorite brand)
1 thin slice deli turkey (your favorite brand)
1 slice mild cheddar cheese
1 cup chopped romaine lettuce
Fry the bacon until crisp and remove from pan.
In the bacon fat saute the chicken breast for approximately 3 minutes per side, until cooked through.
Top with 1/2 the dressing, cheese, turkey, ham and cooked bacon, cover and turn off heat to let everything warm through.
Toss the romaine with 1/2 the dressing and place on a plate.
Place the chicken on top and dig in!
Depending on brands, approx 400 calories, 28g protein and 4g carbs.

Sounds real good, Dottie. Love cooking chicken breasts in bacon grease! Just makes it better!
