Gliuten free noodles

I know there's been a lot of talk here recently about going gluten free. I was just looking at my Netrition email and it seems they have a new line of gluten free noodles. They are pretty high in protein, too. One is made from mung beans, one from black beans, and one from soy. I haven't tried them, but I remember Dawn saying how much she misses pho, so thought I'd post.

Brand is Explore Asian.

Pho is made with rice noodles, which are fine for gluten free eating, but the broth is likely to have soy sauce, which is full of wheat. I bought some rice noodles at the market and will try to make my own broth, but honestly, it won't be anywhere near as good as the tiny Pho place I go to. The broth is AMAZING!

BTW, Keira and I went to Chipotle last night for dinner. I read that the only gluten item they have is their flour tortillas, so everything else would be fine. I have to give them huge props! We mentioned we're gluten free, and the server washed her hands, put on new gloves, and got all new utensils out to serve us to avoid cross-contamination. I was impressed!

JUDDD got me where I want to be!

Start Date: April 2000 (the first time)
We use Ancient Harvest Quinua pasta. It is made from quinua and corn (non GMO) flours. It is in a green box.

It tastes pretty good as long as you cook it for the exact right amount of time. Too little and it is grainy, too long and it is mushy. Cooking time is different for different shapes, so I just wait about the same amount of time as regular pasta and then start checking it.

I buy tinkyada noodles. They are at health food stores and all normal stores in our town. When I eat pasta, this is my go to. Even my children can't tell it is GF! I have been GF since 2005 as I was diagnosed with Celiac.

I think it is LaChoy soy sauce has no gluten--not processed with wheat like other soy sauces. Have used it for years for celiac husband.
