Low Carb Lunch Options

Hello Everyone!

I am about a week in to my Low Carb Lifestyle choice, down about 3 pounds! Which i am WAY psyched about, but I am finding that as far as low carb food goes, I am getting super bored with my food choices. So I was curious what everyone takes for a lunch option, for those that aren't at home for lunch that is

I tried salads, an occasional bacon and eggs for fun, but I get bored easily with food choices.

Any thoughts or ideas are helpful!

I always make enough the night before to take for lunch the next day, or extra meat to add to a salad the next day, or to add frozen veggies to. I shred cheese and have that on hand as well to top my lunches, avocados, home made soup, canned tuna/mayo. Anything goes good on some romaine leaves!

Pepperoni sticks, veggie sticks, cheese sticks, fat bombs with or without dip, sour cream, cream cheese.

Officially down 50 lbs! Another 30 or so to my first goal, then I'll re-evaluate.

Couldn't do it without all the amazing support and motivation from this forum and all the wonderful people here.

I cook and freeze all kinds of stuff. I spend Sunday cooking things like cauliflower pizza and crock pot lasagna then I freeze single servings!

The previous nights leftovers are always good for lunch. I always take LC yogurt (CarbMaster-Krogers brand), pickles, deviled eggs, tuna or egg salad, lunch meat and cheese roll ups wrapped in lettuce with dressing, squash, sweet potato. I'm never bored with my lunches

I make ahead meals and freeze them. I also keep some of the Atkins frozen entrees for use when I don't have time to prep anything. They are pretty good! When in a pinch, I will go to Wendy's and get a burger without the bun.

I make soup on the weekend and freeze it in lunch sized microwaveable plastic containers. Last week was chili and southwestern taco. Great for these bitter cold days!

If you go to flickr and do a search for "low carb bento" you'll find lots of great ideas.

I think quiche or mini-meatloaves would be great with a little salad or some veggies and a dip.

This is why I prefer to eat twice a day at home. I hate having to bring food with me unless I absolutely have to and hate settling to eat at places that I don't even like (or alternatively, paying a ton for really good food at nicer places).

I like to make a big batch of baked chicken fajitas to last me for 3-4 days. Sliced chicken breast, sliced onion, green pepper strips and a can of rotel tomatoes, drained mixed with oil and spices, then baked for about 30 minutes. Delicious warmed up and topped with a sprinkle of cheese and big dollop of sour cream!

Before, I would eat really bad, I can't lie! I would eat frozen waffles with peanut butter, (Im obsessed with PB), sandwiches, canned soup, left over pizza.. things like that, one of the biggest issues I seem to be having is my house is carb full since we were carby people before this change, so its a struggle to kind of weed the carbs out of the house, not to mention the cost.. my goodness. but so far all really great ideas! Thanks everyone!

I completely understand where you are coming from... food boredom while at work is my greatest enemy with this WOE. It's been one of the primary reasons I've derailed over and over again. So this time around I'm making a concentrated effort to never have the same thing two days in a row, and I'm trying really hard to plan something different for each day of the week.

This is my plan for this week:

Monday - Leftover ham steak with mustard cream sauce and turnip greens with bacon
Tuesday- Tuna salad w/mayo and egg and 1/2 an avocado
Wednesday - Shrimp with horseradish mustard and coleslaw
Thursday - Crustless quiche lorraine and small green salad
Friday - Turkey/Avocado/laughing cow rollup and cucumbers in chili lime sauce

BTW - I LOVE the bento box tip - that gave me some great ideas!!!

I think once you get deeper into your diet, you will appreciate the food that you get to eat more, and it will become less boring. I love homemade soup, lettuce wrap sandwiches, green beans in alfredo sauce, and leftover steak or pork chops.

I’m a big fan of including foods I've always enjoyed but tweaking them to be LC. So taking your previous favorites:

1. Waffles & PB – replace it with a LC wrap with PB, celery with PB, cheese and PB (I love PB too)
2. Sandwiches – Lettuce wraps, open face sandwiches
3. Canned Soup – Canned broth and add in veggies and or scrambled egg
4. Leftover Pizza - LC pizza (there are recipes in a pan, with cauliflower crust, or just top an LC wrap or pita

Also, if you haven't already please google Linda Sue's Lowcarb recipes for tons of ideas.

When I take my lunch to work, it's almost always the same thing: salad with lots of crunchy veg, and a Thermos of soup. Sometimes I add meat or egg to the salad; usually I add nuts, too.

Sometimes I make chicken or tuna salad instead of the soup. But it says pretty much the same.

I also keep a stash in my desk drawer: vienna sausages, pork rinds, tuna and salmon packs, little mayo packets, peanut butter (and a spoon!). Those are for the days I am too rushed to make a lunch.

My favorites are Oopsie Roll Sandwiches (with chicken salad or lunch meat, cheese, lettuce, etc), various Linda Sue soups, salad topped with some kind of protein, and leftovers.

I cut a zucchini in half and grill for a bit on both sides
put some tomato sauce
then cheese
then olives and mushrooms
and bake in the oven till hot.

or I make a salad with lots of different veggies..

I try to make my noon meal a veggie meal, I find I do not get tired at work.

You can have the pizza just eat the toppings off the crust, Almond thin crackers and cheese, leftovers from last night, chicken wings, Wrap deli meat around a cheese stick with some mustard or mayo, pepperoni chips (microwave slices on a paper towel) with cheese they can taste like pizza bites with i bit of sauce, bunless fast food burgers no ketchup,
there are tons of threads in the recipe board too!

Sorry - just came back around this way.

I have a few mustard cream sauces that I use. The first one is the one we use most... and if there is any left (a rarity) I refrigerate it and use it as a dipping sauce. I love sauces. :-)

Pioneer Woman's Mustard Cream Sauce: Chicken with Mustard Cream Sauce | The Pioneer Woman Cooks | Ree Drummond (instead of brandy I use chicken stock for deglazing - sometimes a small amount of dry white wine - but less than 1/2 a cup.) I use this with both chicken and pork.

Paula Deen also has a great one that doesn't require cooking meat first - I eliminate the almonds: Asparagus with Creamy Mustard Sauce Recipe : Paula Deen : Recipes : Food Network But it's much better warm, I haven't had much luck with refrigerating it.

Martha Stewart's cold sauce: Asparagus with Creamy Mustard Sauce - Martha Stewart Recipes This is great if you need to just mix something up quick to take for lunch. I dabble with adding and subtracting things... but it's a good base to start with.

The horseradish mustard is just French's brand I bought in the condiment aisle.

The Chili Lime dip is a variation on this: Jicama Sticks with Chili-Lime Dip Recipe | Yummly I use full fat sour cream and double the chili powder.

I used to bring a salad to work everyday. Now I can barely stand to eat a sald because I burnt myself out. Then I switched to a cheese stick, pepperoni stick, and a sugar free Jello. Then I burnt myself out on them too. Now I try tohave some more variety.

I live alone, so when I cook I have a ton of leftovers. I freeze these in lunch size portions. Then I usually take one with me to work for lunch. If I don't take one of them, I will sometimes take some cheese slices and summer sausage, or pimento cheese. I will occasionally make a low carb taco or hot and sour soup to take for lunch.
