Anyone have a No-Bake Cookie Recipe?

I am looking for a low-carb recipe for no-Bake Cookies. Has anyone tried it in a low-carb version and have a recipe? Thanks

There doesn't seem to be a good LC alternative for the oatmeal. If you want to eat soy, there is a textured soy crumble stuff that might work.

I was thinking that I'd seen a recipe for this that used unsweetened coconut instead of oats. It sounds yummy. I Googled and found this one:

4 Tablespoons Coconut Oil Or Melted Unsalted Butter
˝ cups Natural Peanut Butter
6 Tablespoons Unsweetened Cocoa Powder
6 Tablespoons Splenda (granular) Or Another Granular Sweetener
˝ teaspoons Vanilla Extract
˝ cups Finely Shredded Unsweetened Coconut
˝ cups Pecans, Chopped
Preparation Instructions
Mix together the coconut oil, peanut butter, cocoa powder until the cocoa powder is fully incorporated.
Add the splenda and vanilla.
Next incorporate the coconut and pecans.
Use a spoon to drop cookies onto a wax paper-lined baking sheet. Chill until set.
I make small cookies with these. If you like them small like I do, you will get approximately 18 cookies. If you like them larger, by all means make them larger, it will just increase the setting time.

I have used raw sunflower seeds and sliced almonds in place of oatmeal.

I just made these and they were great! I subbed almond butter for the peanut butter, and used erythritol/stevia glycerite in place of the sweetener. I also left out pecans and subbed an additional 1/4 cup of coconut.
They were quick and easy to put together, and tasted great warm. I'll find out what they taste like cold tomorrow.
