Wow! Pumpkin Bake
I made the pumpkin bake today. I used ez sweetz and powdered erythritol for my sweetners.. It was soooo good.. Even my children loved it! Was just like pumpkin pie without the crust!! I am going to the store to stock up tomorrow on more pumpkin.. I added a little Davincis pumpkin pie flavoring to it also.. Made some homemade whipped cream to put on top!! I am sooo glad I tried this recipe!

Google JODY'S PUMPKIN BAKE for lots of threads
JODY'S PUMPKIN BAKE - Linda's Low Carb Menus & Recipes 8 ounces cream cheese, softened 5 eggs 1 cup granular Splenda or equivalent liquid Splenda (see update) 15 ounce can pumpkin 1 1/2 teaspoons Pumpkin Pie Spice 1 teaspoon cinnamon 1 teaspoon vanilla Put the cream cheese in a medium mixing bowl and beat with an electric mixer until smooth. Add the remaining ingredients and beat well. Pour into a 6x8" greased glass baking dish. Bake at 350º about 40 minutes or until the center feels firm and a knife inserted in the center comes out relatively clean. Cool, then chill before serving. Makes 6 servings Do not freeze With granular Splenda: Per Serving: 228 Calories; 18g Fat; 9g Protein; 9g Carbohydrate; 3g Dietary Fiber; 6g Net Carbs With liquid Splenda: Per Serving: 220 Calories; 18g Fat; 9g Protein; 7g Carbohydrate; 3g Dietary Fiber; 4g Net Carbs Last edited by Kateee; 09-30-2012 at 05:01 AM.. |

Yes, that's the one I used but instead of Splenda I used about 1/2 cup of powdered E and then about 15 drops of EZ Sweetz for my sweetner and about 2 tbsp of Davincis pumpkin pie syrup.

I made this today to use as my grab & go breakfast option this week. OMG, it tastes soooooo good! Exactly like pumpkin pie. I made it just as the recipe above instructs. This is a winner: protein, fiber, good carbs, and yummy!!

Just had my first bite and it was DELISH! I made it with splenda and no whipped cream. I may do the whipped cream on it later but it's pretty tasty in its original state.

Alright, now I gotta try this. I've grown up my entire life absolutely abhorring pumpkin pie, so now it's time to let it redeem itself. I made pumpkin cookies last year (low carb, of course) that were pretty tasty, so I think I'll try this come Thanksgiving. My changing taste buds might appreciate it now.

I make this pumpkin bake at least once a month, and usually more often. I like to flavor the whipped cream with different extracts. Right now I'm using maple. It's soooo darn good!

I am making it again today, a double batch, one for DD and one for me. I am going to package hers up in individual servings so she can grab one to take to work. I can't believe how much I like this.

I have one in the oven right now, first try at this. Used half a cup of Splenda, and a heaping tbsp of erithitrol. I added a tiny pinch of salt too, which seemed to pump up the flavor. The raw batter was very yummy, can't wait to try it!

I made a smaller one yesterday morning (about 1/3rd the recepie)
I also added shredded coconut to the batter.. I baked it in a frying pan that was greased with coconut oil and baked in the oven for about half hour.. OH MY LORD. my almost 2yr old was fighting me for it, even though it was hot and i had to blow on it to cool off he would rip it from me screaming to just shove it in his mouth, spit it in his had cause it was to warm, then eat it again.. lmao (don't worry it wasn't so hot that it burned him, but a little warmer then luke warm which he is not use to) It was like a giant pumpkin pancake!

Sherry, I baked mine in an 8X8 and cut it into 9 nice sized servings. I love it.
