Pumpkin ideas

OK, so I opened a huge can of pumpkin a few DD ago, and tried to make a oat-fiber/pumpkin treat. Yuck.
I need an idea for the rest of it - any good pumpkin-based DD recipes? I don't have any gluco-whatsis.

someone on here was posting DD pumpkin shake ideas that sounded terrific. Can't recall who but I would recommend that you search the DD recipe thread for ideas. It was pretty recent, I think.

This is my DD pumpkin shake:
1/4 cup pumpkin- 20 c
2 Tbs sugar free maple syrup- 5-10 c
1/4 cup vanilla unsweetened almond milk- 10 c
Davinchi SF syrup (just a little and I use different flavors)- 0
Cinnamon- 0
Nutmeg- 0
ez-sweetz 2-3 drops- 0
1 Tbs Walden Farms marshmellow dip- 0
1/2 tsp gluc powder- 5
4 ice cubes- 0

High estimate 40-50 calories

Blend for about 1 minute

FF plain greek yogurt is really good, too, but bumps up the calories.

I'm not sure where I found this recipe, so I'm not sure if the nutritional facts are correct. But I make this all the time and they are pretty good. Really moist too. I usually add raisins to the mix.

Pumpkin Spice Muffins

Ingredients:*
2 cups whole-wheat flour, 
2 teaspoons baking powder, 
2 teaspoons cinnamon, 
2 teaspoons nutmeg, 
1 teaspoon baking soda, 
2 eggs beaten,
 1 cup pumpkin puree, 
1/4 cup sugar, 
2 cups unsweetened applesauce, 
2 tablespoons canola oil, 
1 teaspoon vanilla extract
Yield:*
18 Servings
Method:*
Preheat the oven to 350 degrees.
Mix together the flour, baking soda, cinnamon, nutmeg, and baking powder in a medium bowl. Combine remaining ingredients in a large bowl. Slowly add the dry ingredients to the large bowl until just blended. Do not over beat.
Pour the batter into 18 non-stick muffin cups and bake for 25 to 30 minutes. Remove muffins from the oven and let cool slightly. Remove the muffins from the pan and let cool completely.
This recipe yields 18 servings. Serving size: 1 muffin.
Nutrition Facts: Calories 86; Calories from Fat 22; Total Fat 2g; Saturated Fat 0g; Cholesterol 24mg; Sodium 119mg; Carbohydrates 15g; Dietary Fiber 2g; Sugars 4g; Protein 3g

A pumpkin spice coffee creamer:

1 cup heavy cream, half and half, fat free half and half, coconut milk, almond milk - whatever you use!
1/3 cup pumpkin puree
1T pumpkin pie spice
1tsp vanilla extract
sweetener equal to 1/2 cup (this is a concentrated coffee creamer)

Mix and store in a container you can shake very well before each use.

By the way I have kept the open can of pumpkin covered with foil or plastic wrap in the fridge for more than a week and it stays fresh.

The gluc gives it a thick creamy texture, but I'm sure it tastes the same without it.

If you're not using the gluc powder I would add the plain, FF greek yogurt, perhaps. Just a spoonful would make it creamier I think.

When I have leftover pumpkin, I freeze it in an ice cube tray for later use. Pumpkin ice cubes are great when making a shake!

I mix with cream cheese, splenda and cinnamon then put in the microwave for a great breakfast treat. Tastes almost pumpkin pie-like but I have had a friend tell me it reminded her of oatmeal (which I don't like, I don't feel it is like that at all lol but we both agreed it was great!)

I just found this recipe and will definitely make this and let you know how I like it! I am a frappe addict! It says 45.6 calories, but I believe I will calculate on ****** and confirm.

Pumpkin Spice Frappe!



Ingredients

1 1/2 cups coffee, frozen, partially thawed
2 Tbsp. pumpkin, canned
1/2 tsp. vanilla extract
1/4 tsp. pumpkin spice, ground
1 tsp. stevia
1/2 cup unsweetened coconut milk
2 tbsp. whip cream, fat free
1 dash cinnamon, ground

Instructions

In a blender add coffee, pumpkin, vanilla, pumpkin spice, stevia and coconut milk. Blend until smooth.
Pour into a glass and top with whip cream and sprinkle of cinnamon.

Notes

Calories for the whole thing including whip cream: 45.6, Fat: 2.6, Cholesterol: 0, Sodium: 8,9, Potassium: 35.6, Carbs: 3.9, Fiber: 1.2, Sugar: 2.2, Protein: 1.1

I love pumpkin custard in individual ramekins!!!
your basic pumpkin pie filling (doesn't everyone have a recipe they love?) baked in coconut oil greased one cup ramekins. Grab and go for breakfast, warm up for dessert..whatever.
I use 50/50 erythritol and coconut palm sugar with a dash of stevia for sweetener to keep the sugars low.

Well, I went to look up unsweetened coconut milk and it truly is 25 calories for 1/2 cup! It only has 2 tbsp of pumpkin which I estimated at 14 calories. So, I am going to make the pumpkin spice frappe and let you know how this tastes. What a lovely way to celebrate DD! .

I get confused sometimes about coconut milk. I have the kind in the box (So Delicious) which is low calorie, but then if you talk about the kind in the can - - - - it's 160 calories for 1/3 of a cup!

I tried the frappe with 1/4 cup unsweetened almond milk instead- 1 sip and poured it out. I hope the coconut milk makes the difference.

I am wondering why you don't just use skim milk for 40 calories? Or if you love half n half you can have 2 tbsp of fat free for 40 calories in place of milk?

I had used a 1/4 cup of almond milk which was 10 calories, but I will experiment with some half and half even if it turns out to be an UD treat.

As many ice cubes as I need to get the job done- 0

Yum! Sounds good. Is the walden farms apple carmel good? I may need some of that!

I'm getting ready to leave for Canada so I froze my pumpkin in a spare ice cube tray. It should be really good for making smoothies when it's frozen.

I should be able to check in and say Hi from Canada!

Holy WOW was this GOOD! I forgot the nutmeg, and used ginger instead.. and forgot the maple flavor too, lol - but WOW.. YUM! I had to make a double-batch because the kids tasted mine and went bonkers. The above makes a huge pile of smoothie for only 30 calories!!!
I will TOTALLY make this on an UD with whipped cream on top. Just sayin.
