Watermelon Basil Lemonade Slushy

When I was in California we visited the Getty Villa where we sipped at some of their house lemonade, which was really this pulpy watermelon lemonade slushy. We enjoyed it so much, I thought about making it at home. Then I realized how easily it could become a vehicle for appetite suppressing glucomannan powder.

Here's what I came up with:

5 Lemons, halved and juiced
4 C watermelon chunks tightly packed
1 Handful of Basil
Sweetener of Choice

Take five lemons and juice them into a big pitcher, then dump the rinds in the pitcher for flavor. Next, take watermelon and basil and pulp them together in magic bullet/vita-mix/blender and add it to the pitcher. Add water to taste--the more you add the fewer carbs and calories are in the whole thing of course. I sweetened to taste with liquid splenda, though you could use anything.

Now, when it sits overnight in the fridge the flavors intensify but the watermelon separates out from the lemonade. This is where the glu powder comes in.

Today (an up day--I don't like to experiment on down days because if anything goes wrong I become enraged) I mixed it up, poured it in a magic bullet cup with some ice and added half a teaspoon of glu powder, then blended it into a slushy. The glu powder keeps it from separating and boy was it refreshing.

The carb count is less than 8--that's a very conservative count if you anticipate getting a cup of lemon juice from the lemons. I think mine is closer to 5.
The calorie count is no more than 32--I think mine was closer to 25

And though I normally don't like to expend anything in liquid calories, this tasted like summer to me! It was not only pleasant and refreshing but it was very nicely filling b/c of all the fiber.

Are you talking about a 1-gallon pitcher?

PS--Also...sorry...how do you measure a cup of watermelon? Chunks, or puree?

I have a gallon pitcher, yeah. It might actually be bigger. And I measure the watermelon in chunks that I stuffed into the cups.
