? about my coconut bark

I have made this about 3-4 times and each time when I eat it, it is rather wet with oil I keep it in the freezer as it seems to want to kind of melt Any suggestions?

The last time I made enough for 4 days, but, but I ate it all in a day and a half

Leona

ps - should I be counting the calories in this

I tried it without counting the calories and gained weight so I cut it out completely. One less thing to confuse me or derail me.

I would add more cocoa powder or another dry ingredient.

Some do fine not counting the calories, but I totally stalled when I didn't count them.

I don't make it at all. I did in the far past, but no longer. I do use coconut oil in my cooking sometimes, if it's something that I think will benefit from that slightly coconut-y flavor. And I always, always count the calories in it! It most certainly does affect me, just the same as any other fat! But as for candy, if I want something chocolate I usually choose a Hershey's Symphony Bar with milk chocolate and chopped nuts and toffee pieces.

Can you post the recipe for your coconut bark?
So we can give suggestions more easily?

I like it too much, too. The calories DO seem to matter to me, also. IF I were to make it, I'd only make a small enough batch to eat in one day without derailing myself. And, like Pat, most of the time I'll just have a good chocolate bar on my UD, if I feel the desire.

I make JoyJoy's recipe, v similar.

1/2 cup CO melted
6T cocoa
2T instant coffee
chilli powder and salt to taste
Sweetener of choice.

I don't put it in the freezer, just the fridge.

Leona, have you had better results yet?

The "sweetener of choice" could be a big factor.
I use a little bit of coconut sugar, so I think that makes the recipe less greasy.

I guess I'd use a bit less oil and/or more cocoa powder.
If you really like the coconut flavor, you could add some toasted coconut flakes.
Or, if you have coconut flour on hand, maybe experiment with adding a teaspoon or so of that. It absorbs liquid like crazy!

No, I have not made it since posting this. I wonder if this no counting of CO is why I gained and had a very hard time getting the scale to behave I did make this using 1/4 cup of co and it lasted only about 26 hours

I am really naughty because I add hwc or cream cheese to mine. I can't recall who posted the recipe, but it does seem to make it more like fudge.

I started counting the calories and I can't have it on DD at all.
