Roasted Green Tomatoes

To my delighted surprise they are delicious. Better than fried green tomatoes any day & w/o the fuss. I tossed them w/ sea salt & 2 T olive oil & everyone loved them.

Roasted Green Tomatoes

12-15 green tomatoes, cut into cubes
2 T olive oil
1 t salt

Mix in baking dish. I prefer glass as baking time is less. Bake @ 350 for 45 minutes.
