Heavy Whipping Cream Revelation

Oh boy. THis makes me feel stupid for past years, but happy now.

When you get whipping cream that is NOT ultrapasturized, have you noticed that at the end there are big semi solid blobs in it sometimes?

I have at times thought that meant the cream was turning bad...

I have realized that in fact this is just separated out HEAVIER cream, like either clotted cream in Britain or mascarpone in Italy. There is more of it clinging to the inside of the carton too. it is fantastic, the best part of the whole cream.

tossing the carton without breaking it open to remove this thick cream spread is a crime! LOL

Is it just at the bottom? Sometimes I buy cream from a farmer's market that bottles their own and I like it a lot. So rich and creamy, but I end up throwing it out before its finished because I see clumps on the side and get a few globs in my coffee.
