15 calorie zucchini tots

I just "borrowed" this recipe - I am going to put it in the DD recipe thread as well, but since I am always looking for new DD foods to try, thought you guys might want to see it too, and new recipes kind of get lost in there sometimes....

I have not tried this personally yet, but it got VERY good reviews on ***, so I plan to try it tonight.

Ingredients:

Squash - Zucchini, includes skin, raw, 1 cup, chopped
Onions - Raw, 1/4 cup, chopped
Parmesean Cheese Grated - 1/4 cup
Panko Bread Crumbs- 1/4 cup
Eggs - Whole, raw, 1 large

Put the onion and zucchini in the food processor so it's finely chopped. Mix everything together. Spoon by the teaspoonful into mini muffin tin (GREASED) Pat down with back of spoon. 400 degree oven for 20 minutes or until you notice them getting a beautiful brown crust on the edges. Makes 12 tots per tin.

Wow! Thanks! That sounds delicious! I have all the ingredients and am going to try these tonight with dinner.

Good idea to put this recipe on a new thread. I would not have seen it probably if it was in the recipe thread.

Sounds very much like my recipe for zucchini pancakes. Pretty much make up the batter as noted, but fry it by the spoonful on a hot skillet instead of baking in muffin tins.

Really good topped with sour cream.

Thanks for sharing that variation! I'm gonna try that, too.

Sooooooo, they are in the oven right now! I realized when I started making them that I'm out of Parmesian cheese! Oh no! But, I did have some grated mozerella so I substituted that. Hope it works ok.

Right now my house smells insanely wonderful!

It's 99 degrees outside and my airconditioner is struggling to cool us off. Probably not the greatest time to have the oven on. But, I figure 20 minutes can't hurt too much.

Just had to have these when I read that recipe! I'll let you know how they taste with our yummy steaks! Luckily it's an UD for me so I won't feel bad eating half the pan!! Man, they smell deeeeelish!

I am about to put mine in the oven. I don't have a food processor, so tried to chop it all up in the blender, which didn't work so hot, so mine may be a little chunky, but we will see. The only addition I made was adding some Mrs. Dash garlic and herb. Other than that constructed as written . Mine filled 14 mini muffin tins, and when I put everything in *** it came out to 19 calls. Still pretty awesome. Am really keeping my fingers crossed.

Yam Yam - how did yours come out?

Official report: They are delicious! So yummy! they turned out like baby quiches. I ate 5 of them. DH gobbled up the rest! He loves them!

Tip: I used a grater for the zucchinni. I used to make a lot of zuchinni quick sweet breat because our garden kept giving. I always just used my metal kitchen grater. It worked awesomely great for these!

Again, thanks for sharing. I will make these again, soon!

Hey, makes me happy when he gobbles up good and healthy foods! We both loved it. I think I know what I'm making for my next women's auxilary meeting when I have to bring food to share. Everyone's gonna want the recipe!

DH just fell asleep already. Stuffed and happy. I cleaned up the kitchen and will surf around for a while before I hit the hay.

Depends on the type of breadcrumbs. When I was buying the panko breadcrumbs, I checked all the ones they had - some were as much as 110 cals per 1/4 cup - but the one that I found an bought was 100 cals in a half cup. So only 50 cals there.

So mine came out like this:

Zucchini - 1 C = 20 cals
Raw onions - 1/4 cup - 17 cals
Panko Bread Crumbs - 1/4 cup = 50 cals
Shredded Parm - 1/4 cup = 110 cals
Mrs Dash - 0 cals
1 large egg = 70 cals

Total 267

My recipe made 14 so 267/14 = 19 cals (as I mentioned above, mine came out a little higher than the person who originally posted the recipe, but I can't quibble over 4 calories per tot. )

You bet - I am always on the prowl for something easy that uses every day ingredients for a change - particularly for DD's - I get really grumpy when I am hungry so I need VOLUME and taste!

Maybe use something else as a filler instead of breadcrumbs? I am anxiously awaiting my first zucchini from the garden to try this recipe.

I used 3T egg beaters, 2T parmesan and 1T oat fiber (instead of the panko) and they came out really well!
Oh I grated the zucchini and squeezed the heck out of it before mixing it up.

They're also really good with feta and mint instead of parmesan. That was the original "zucchini pancake" recipe I used.

This morning I made the zucchinni pancakes and boy were they yummy! I'm going to post a thread about it.

I like experimenting. I even totally forgot to add the cheese and they turned out awesome. This recipe made four big pancakes. Each is only 37 calories:

1 cup zuchinni, grated and packed into the cup
1 whole egg
1/4 cup oat bran
1/4 cup dried minced onion
1 heaping teaspoon fat free, plain, Greek yogurt

(would have added 1/4 cup mozzerella or parmesian cheese but I forgot!)

Pre heat pancake griddle to 375 degrees.

Spoon four good sized pancakes on to grill (my grill instructions say to never spray it with cooking spray. I don't and everything cooks beautifully on it).

Let the cakes brown totally on one side for a few minutes. Then flip and let them brown totally on the other side. Flip one more time for good measure!


I also made DH his favorite oat bran/yogurt pancakes and served them with Davinci syrup.

Oat bran pancakes:

4 egg whites in bowl and whisk til frothy
add 1/2 cup oat bran
add 1/2 cup fat free plain Greek yogurt
optional - add 2 small packets splenda or your favorite sweetener
mix thoroughly

Use a quarter cup measuring cup to spoon pancakes onto preheated 375 grill and brown totally on each side (don't pat down, just let 'em cook!)

They are delicious!

Popping in for a couple of minutes from our campsite... Did you know that campgrounds have wifi? I didn't!

Omg y'all. The zucchini tots make awesome camp food. we made them and put them in little foil cups nested inside a larger pan (we used a foil round cake pan). A little spray of Pam and then put them inside the BBQ grill to cook. These are so yummy!

Ok DH is lighting a fire. Gotta go. Love you all!!

I made these today they are very good but they got stuck in my mini muffin tin even though I sprayed them.

I had already mixed the (super big) zuchinni, onion powder, salt, pepper, and egg whites together when I realized I didn't have parm cheese (!!!!) so I used 3 wedges of lc garlic and herb cheese. Very good!
