low carb heaven!!

So it's a little off from what I'm supposed to be having but I'm getting desperate for options..anyways last night I made oven baked chimichangas by using small low carb tortillas shredded grilled chicken and a little cheese...baked them with olive oil drizzled on top and melted a little cream cheese and guac on top and I swear I was actually in heaven!!!!

Low Carb Tortillas are my low carb lifesaver. Cannot live without them. My husband and I also eat Pepperidge Farm Low Carb Bread. every once in a while, I need it.

I tried a low carb tortilla for the first time last night since I started low carbing two years ago. I was craving a sweet treat and I took a tortilla and fried it in a little oil and topped it with melted butter, cinnamon, and Truvia. It was pretty tasty.
Falling down along the way doesn't keep you from getting to your destination. Failure to get back up and keep going does.

I'm still not eating the low carb tortillas since I'm staying on induction until I consistently lose for a few weeks, but I have a package in the freezer, ready to go. I also love Joseph's pitas. Only 5 net carbs and 60 calories. They open easily to stuff with salad or eggs and make you feel like you're having a sandwich. You can also split them, brush with olive oil, cut into wedges and sprinkle with Parmesan, then place in a low oven for a few minutes for some awesome "chips."

That sounds delish us3annes!!! Once i'm done with induction i'll have to grab some of these LC tort's and try em! I'm a feind for mexican!
