Spelt flour (UD recipes)

Does anyone here use spelt flour?

I bought some for the first time last week and am trying different things with it.

So far the best result was when I made chocolate chip cookies from them (using SF chocolate and using coconut palm sugar). Liv Life: Spelt Chocolate Chip Cookies

Any other recommended recipes?

It makes a very nice soft loaf of bread. Not tried it in baking yet but the lovely nutty flavour should add something.

I primarily use organic spelt over wheat. Love my whole spelt brioche! it is my adaptation of the no-knead recipe in healthy bread in 5 minutes a day..great cookbook worth having.

I am grain-less but I use spelt flour for DH. I use it in place of wheat flour (I bake bread in the breadmaker, make cookies, muffins, etc). There are bunch of spelt recipes, just google it.

Check out this blot. Chocolatecoveredkatie. She has some great recipes using spelt and other flours. Her blog is addictive so be prepared. You will be there for awhile...lol
