Coconut Anyone?

I've always been a vanilla fantatic and have never been able to get enough, but lately I can't get enough coconut and it's been the second runner-up to vanilla. I recently stocked up on coconut lotion, body wash, coconut crystals, coconut vinegar and Davinici's s/f coconut syrup. I also just ordered some coconut flour.

We're fortunate that we have a huge chain here close by that sells Davinci and Torani syrups (every flavor under the sun) for less than $4 for the 25-oz. bottles. I also can't get enough Blue Diamond almond milk.

Anyone else love coconut as much as I do?

My son and I both love coconut--but, perhaps oddly, mostly in savory dishes. Sweet coconut things are yucky to us!

Coconut milk/cream is so good in curries, soup, and rice...shrimp...mmmmmm!

We also like to melt it and put it on popcorn--instead of butter, or half & half.

I use coconut oil and milk a lot. And I like adding dried, unsweetened coconut to curries.

Yes, this sounds delish! I used to work for a husband and wife years ago and on Fridays we would sometimes go to this Thai place that had this seafood curry soup made with coconut milk.

Eggs cooked in coconut oil are...

Love it sweet. Love it savory. Love it as the main ingredient and as a subtle, almost undetectable flavor that enhances the main ingredient. Love to poke holes in the eyes and drink the innards. Love to shatter the shell, pull everything out, and just munch fresh coconut. Always have. Suspect I always will.

And fresh from the shell on a tropical beach, maybe with a little rum.

Can't bear the smell of the lotions etc though.

I don't think there's any way I don't like coconut. I admit I'd probably brush any sugar off flakes, but oh, the coconut underneath! The new thai place here has coconut milk in the shell. Yummy.

I cook everything in EVCO. Love coconut shrimp and coconut cream pie!!!! I have been drinking coconut chai today for Mother's day. My fav coconut pleasure is pina colada and if it is made just right on a hot summer night, it is delightful!

I adore coconut. nutiva is good, but tropical traditions has a coconut cream concentrate that is INCREDIBLE. I could eat that all day long!

My family is dairy free and has been for 8 years so we lean heavily on coconut for sweet and savory. LOVE IT!

I have always had bathroom problems but 1 probiotic and 1 teaspoon of coconut oil everyday and I'm good to "go" like never before!

I just looked it up. It looks interesting
For low carbers maybe exchange
cornstarch for gluc powder
Spenda for sugar
I am not familiar with orange blossom water...maybe similar to rosewater?

Tembleque

4 cups coconut milk
˝ cup of cornstarch
2/3 cup of sugar
˝ tsp. salt
1 tblsp. orange blossom water (optional)
ground cinnamon

In a saucepan dissolve cornstarch in 1/4 cup coconut milk. Once dissolved add the rest of the coconut milk, sugar, and salt. Cook at medium-high heat stirring constantly! As it thickens, lower heat until it boils thick. Pour right away into wet molds, pans or cups. Cool and then cover and refrigerate for at least 2 hours. Carefully separate the tembleque from the mold using a knife. Turn it over unto a dish. Sprinkle with cinnamon.

Makes about 12 servings.

I do love coconut, but like you I love love love vanilla. I buy vanilla beans online. You can get vanilla beans from several different places in the world, I recently bought some from Kenya. By getting them in bulk it comes out to at least $10 less per bean than from the market. And the beans are much larger and never dry.

Coconut oil, coconut mana, coconut vinegar, coconut water, coconut dry milk powder, boxed cocnut milk, my lastest is like a pam spray made of coconut oil. MCT oil is also a derivative of coconut oil use the MCT in my salad dressings. If I hear about it and its made from coconut I buy hehe!!

I'll have to look into that. Where on the Oregon Coast are you? We live in the Portland area, but we have a family beach house in Manzanita that we all have the keys to and as long as it's not being used - we can go any time we want. We just check in with my awesome mother-in-law.

I never liked the flavor of coconut when I was younger, but now I love all things coconut, except the flakes. LOL

Coconut sugar is my newest best friend. I can use it in baked goods and not get the blood sugar spike I get from reg sugar/honey/maple syrup.

Isn't the coconut sugar fairly high in fructose?

I remember when I was looking into it I didn't love it for some reason....I want to say it was the fructose content...?

I love the flavor of coconut, like nancy I can just eat it right out of the shell. I use coconut oil as a moisturizer, for oil pulling and for healing skin problems, but don't eat it much. I do not like coconut water though. Although SoBe has a new drink that's made with coconut water, but is much better flavored. Yummy. I also bought some pina colada flavored yogurt recently that has me reconsidering my usual distaste of yogurt.

I found this on a couple of sites with a quick google:

I guess if I were eating it every day, it could be an issue. But if it makes the difference in being able to have a once-in-awhile treat, vs never being able to, I'll take it.

I love coconut anything You name it, I have it. I have coconut oil that I slather on my skin, oil pull with and use as deodorant. I have coconut oil lotion, cream and body wash as well as coconut soap and coconut shampoo bar. I have coconut peanut butter, coconut cream concentrate, coconut shreds, coconut flakes, coconut chips and the flour as well. I have coconut sugar, coconut water vinegar, coconut water, Torani coconut syrup, even coconut tea!! I could go on....literally but I think you get the idea I love coconut I even have a few coconut books--a couple of cookbooks as well as a couple of Bruce Fife's coconut books. Oh, and I just bought some coconut oil spray I found in Earth Fare this past week. First time I found that! I get coconut powder from my Asian food store.

Oh, the two of us have been coconut fanatics since we've known each other, eh?! Although I don't have the coconut books or the coconut tea, but just about every other item you mentioned.
