How long do you think that vinegar marinated cucumbers stay fresh in the fridge?

I would think a really long time. Isn't vinegar a preservative?

I guess they wouldn't last very long if marinated in lemon juice would they? Probably just a few days or so?

I'm not a science tech. But I have made a cucumber alad that is primarily cucumbers and vinergar and it lasted until I ate it all, over a week. No sign of trouble.

Aren't you basically making them into pickles? Pickles last almost forever, don't they? Now if you've added other ingredients, such as sour cream, then they would spoil more quickly.

I made refridgerator pickles with the left over juice from the clausen jar - it has been in for over a week and they still are good to me nevermind that the claussen jar had been in the fridge for a month before that...

certain microbes grow but the acidity of the vinegar is not a great breeding ground for most microbes, also the cool temp of the fridge will ****** their growth as well. I mean we keep containers of vinegar out for months at a time with no ill effects. people in other countries use pickling as a sole source of food preservation. As long as you cleaned your prep area, utensil, and hands and do not use a fork or spoon that has been in your mouth to reach from the bowl you should be fine.

My kids LOVE to lick the spoon when they are getting sour cream or greek yogurt... they are only 5 and 7- they always ask "mom are we done with this spoon? can i lick it now? they know how I feel about the germy spoon going back into the container!! I took micro last year and had nightmares of bacteria and microbes for weeks LOL!!

I was thinking the same thing LindaSue. It's kind of like pickes which last almost forever. I didn't use other ingredients. Just a mixture of Bragg apple cider vinegar and filtered water with some NuNaturals no carb stevia added.

Yep I'm with Linda Sue!

Also, you will know if they are bad. Just like olives, they will have an "off" flavor. I've eaten them months after, and that's just from me cutting them and putting them in an empty Claussen pickle brine.

I make cucumbers and onions w/ vinegar and a smidge of a sweetener every summer. I also like to add crushed red pepper. It lasts in the frig.. foreevvvverrrrrrrrrrrrrrrrrrrrrrrrrrrrrrrrrrrrrrrr rrrrrrrrrrr.
