Can you stay for dinner? Egg white oatmeal

Ironically, the same day the thread was started about Cream of Wheat, I'd just had it for the first time in a very long time...its such comfort food.

When I saw how well others did with that, I remembered this recipe that I made almost every single day in January/February. I don't know the exact calories but it does come in around 300. She says it is one serving. I have never eaten it all at one time. This morning, when I made it, I just ate half and counted 150 on this lovely (sarcasm) DD.

She has a great website and is inspiring...she lost 135 pounds several years ago and has maintained it!

See the actual website for photos.

ENJOY!

The Best 300 Calorie Oatmeal You’ll Ever Have | Can You Stay For Dinner?

Egg White Whipped Oatmeal
•2/3 cup old fashioned rolled oats
•4 egg whites, beaten with a fork until frothy
•˝ tablespoon salted butter
•˝ teaspoon pure vanilla extract
1.In a small pot, combine oats with 1 1/3 cups water (always double the amount of water to the amount of oats. Ex: ˝ cup oats cook in 1 cup water).
2.Heat on the stovetop, uncovered, on medium-high heat until the mixture comes to a simmer (about 4 minutes). Stir and reduce the heat to medium-low. Cook for about 5 minutes, stirring frequently, until the oats have absorbed much of the water.
3.Pour in the egg whites and vanilla and whip vigorously with a fork, until the mixture is well blended. Raise the burner heat to medium. Stir in the butter.
4.Continue to cook for 4 minutes more, bringing the oats back to a simmer and stirring frequently.
5.When the oats have absorbed all of the water and the egg whites have caused them to puff and appear creamy, cover the pot and remove it from heat. Let the oats sit, covered, for 5 minutes. Stir and serve immediately.

Not sure if I would like that, I might try it...I have been wolfing down the Quaker Old Fashioned oatmeal for the past 3 days or so after not having it for years. So yummy and filling!!! It's a DD today and when 1:00 rolls around I'll once again have my oatmeal.

Hi, Becky. If you loved oatmeal, I would say you will enjoy this but if you don't really like oatmeal anyway, I just don't know.

I will say it is more filling and more "decadent." It is also the only oatmeal I can eat without sweetener! That is really, really good for me as I'm totally into sweets of all kinds.

OMG! THANK YOU!!!! I have been thinking about OATMEAL ever since I read the "cream of wheat" thread!

I have never liked wheat or creamed wheat, but oh how I love oatmeal. So last night at the Whole Foods, I was standing in the Oatmeal aisle forever reading all of the labels, pondering if this might be used on a DD for a meal! Thank you for posting this recipe, because I would have loved to had this in the beginning with a bit of flax meal on top. Now if they only made "brown sugar" flavored stevia.

OH when I did the Weight Watchers "Core" program there was a recipe I used to make that was very similar. This one you added just one whole egg, and 1/2 teaspoon of vanilla though instead of egg whites and butter. It sounds strange but it is SO good! We called it "Oatmeal Custard."

It's also amazing with fruit on top like blueberries! Thank you for the reminder!!!

It definitely becomes more like a custard texture than like regular oatmeal to me. The vanilla totally turns the flavor factor up a notch and I'm sure the butter doesn't hurt either...

Waaay back when I tried the Zone, I did the egg white oatmeal and it was not good at all.
the eggwhite looked like little flakes of, well, egg white.

Maybe that's not how it's supposed to turn out but I didn't try again.

I've had that happen but if you use a whisk and stir pretty continuously after the eggs go in, that won't happen.

I like oatmeal and eggs but I am not sure about at the same time. Maybe one of these mornings I will feel brave enough to try it.

Well, ladies...its kind of like saying I like CAKE and I like EGGS but I don't know if I like them together when we all know you need EGGS to have a CAKE!!!!

Once you put the eggs in the pot and stir, stir, stir while they finish cooking, its not like eggs in there all! They just become thicker and more creamy.

I don't promise you'll like it but it might be worth a try to get the "stick to your ribs" benefit of oatmeal with the added protein of egg whites.

OK I had to taste test this-saved it for an UD and have to admit it is REALLY good. It makes HUGE amount and while I first thought it would only be a DD meal if you cut it in half you would still be full on just 150 calories and if I could eat that and stay full til supper that would be a great option for my brunch. Thanks for sharing this imajule-will see how long this keeps me full and it could become a part of my daily rotation.

I might have to try it this weekend....1/2 recipe will be plenty and then if I hate it, won't have wasted my farm eggs.

But I love oat groats alone and hate egg white omelets so together (oats and egg whites) sounds like something I would end of feeding the yard dog.

Glad others love it and I have an abundance of eggs so might try it next week. I am open to a lot of things but it scares me since I tried the egg drop soup that everyone raves about and that about made me sick trying to eat it. Dog enjoyed it though. I think he likes for me to experiment.

I wonder how this would work with Egg beaters? I have a big container I bought and never touched, and it goes out of date in 3 weeks.

OK, I'm eating this right now (with a little sugarfree pancake syrup)--it's great! Very creamy, not at all "eggy." I used the egg whites that come in a carton, and they worked fine. I only made half a serving, since I can't usually finish a whole 1/2 cup serving of oatmeal so 2/3 cup would be a LOT! Definitely another one to add to the weekend DD rotation (I eat in the car on workdays, so oatmeal wouldn't work!).
