roasted veggies

The other day I made a big pan of roasted veggies. They are delicious. The problem is I didn't make a recipie and figure out the calories per serving and now I have no idea how to calculate what they should be.

Anyone care to guess what I should enter? I just ate 4 oz of them. I used zucchini, summer squash, portabella mushrooms, onion, a few cherry tomatoes, and 2 TBLS olive oil.

I'd count 100 calories assuming you got about 1/3-1/4 of the total cooked (allowing for roughly 60 calories from the oil, or 1.5tsp).

I am with you, Scotty! Roasted veggies are one of the great culinary pleasures of life. I jumped into JUDDD before I planned to because I needed roasted zucchini.

My recipe for Shawarma Roasted Vegetables is just what you listed pretty much has 91 for about 1c. (1/6 my recipe) and it has a little eggplant in it even Yours has no eggplant and would be a little less so probably about 80 calories, I'd guess.

Broccoli, cut up really small with some oil sprayed on it and cooked until it is almost burnt is amazing. Sprinkle with salt and pepper.
