Cacao nibs
OMG so I bought some raw cacao nibs... they smell and taste like decomposing vegetation

I kind of like them - but I was introduced to them via chocolate covered nibs.....I sort of let them sit in my mouth for a bit to get the flavor. Maybe try and put them in some melted chocolate or cocoa powder? Good luck, hope you find something you like!!

By your description your nibs must be rotting. Nibs are just crushed roasted cocoa beans & what are used to make chocolate. The taste should be like intense bitter chocolate and cocoa butter. I would take them back to wherever you got them and get a refund.

These are raw though - not roasted... they are from whole foods came sealed and do not have moisture or mold in the package. I think maybe there is a differnce between raw and roasted?

good heavens! have you ever tasted unsweetened chocolate before? it's the same flavor, right? my cacao nibs are Scharfen Berger, but they are probably very similar.
unsweetened chocolate is an acquired taste though. I use mine to top flax muffins occasionally, and I sprinkle granular erythritol generously on top of them. when they "bake" in the microwave the E melts and the whole topping is sweet and crunchy. be careful trying to roast them if they are small pieces like mine. oh, is that a difference? mine are fairly small bits. I imagine they are chopped from a larger piece originally. cacao nibs are sort of like bitter chocolate nuts, not like candy at all.
