Easy, yummy crock pot chicken breasts
This is just a tweak of a recipe I found on here years ago, but it has become my go-to chicken recipe.
Take three large chicken breasts (on sale this week at Krogers) and place in crock pot. In bowl, mix 2 C. diet lemon/lime soda with 1 C. low carb ketchup. Pour over chicken and cook on high for 3.5 hours.
Remove breasts from cooker-carefully as they may start to fall apart.
Pour sauce from crock pot into saucepan and boil until it reduces to a thicker, BBQ sauce consistency. Pour over chicken and enjoy!
You can also shred the chicken before pouring reduced sauce over it to make great BBQ sandwiches.
You can use diet orange soda, lemon/lime soda, diet cola or even diet gingerale, but I prefer the lemon/lime. Easy and tastes wonderful!

I've read variations on this recipe for years and STILL never tried it! LOL!
I really must. It sounds too simple to be so good but so many people say it IS!

Annie you can do this with whole chicken in the crockpot too.
Diet cherry cola was really good.
