LC/LF Pancake recipe???

I know there are a few of us out there that enjoy both Low Carb and Low Calorie dishes... I was wondering if anyone had a pancake recipe? Any help would be greatly appreciated!

I make a pancake just using egg.

Beat an egg as if for you're making an omelette. I then add some splenda in (or some sf syrups) - then use quite a bit of low cal spray and a good non-stick pan - and make a thin crepe!!!

sprinkle some lemon and splenda on it - and yum!!!

That recipe looks very similar to the ones I made last night, and they were really good.

This is half the recipe, and made 13 small pancakes:

3 eggs
1/2 can coconut milk
1 tsp vanilla
1/4 tsp baking soda
1/2 Tbsp honey (you could probably use Stevia for even fewer carbs)
1tsp cinnamon
6 TBSP coconut flour

Beat eggs until fluffy, add other ingredients and mix well. Pour small amount in hot pan sprayed with cooking spray. Flip when golden brown. If they are difficult to turn, let them cook a bit longer.

I calculated the cal info per pancake as: 54 cals, 3.6 g fat, 1.9 g net carbs, 2 g protein.

Thanks Tina- Those sound really good! I wonder if I could sub some Oat Fiber for some of the coconut flour for less calories??

Or is there a recipe out there with oat fiber?

A quick google search found this one (not sure what her serving size is--but they look much bigger than I made mine). Sounds good though.

I make DD pancakes using psyllium fiber and liquid eggwhites and davinci syrup. Filling and very very few calories.

I make "pancakes" with cottage cheese and eggs

6 eggs
12 oz cottage cheese
1 scoop protein powder
1 tsp splenda
1 tsp vanilla syrup (sugar free)
1 tsp vanilla
1 tbsp coconut flour

These came out a bit thinner than I wanted, but still tasted ok. I think I'd use less eggs next time( like 4). You could change the flour, remove the protein powder, whatever!

I had a fail safe recipe, but I don't know where it went. I need to find it. Anyway...with fruit, these are awesome. I think they reheat well too.

Dukan's pancake is soooooo awesomely delicious. to make 4 or 5 pancakes:

Heat grill to 375

4 egg whites (wire whisk in bowl 'til frothy)

add: 1/2 cup oat bran

1/2 cup fat free, plain Greek yogurt

optional: 2 small packets splenda

Mix 'til blended well.

Then I use a 1/4 cup measuring cup to pour nice round portions onto the griddle. Don't touch for about 2 minutes or until you can tell it's a nice dark brown and then flip and cook the other side.

These rise up so fluffy and are very satisfying, delicious and filling. They keep well in the refrigerator, too. and, they taste great chilled or warmed.

A little oat bran or nut flour with chia gel or glucomannan gel, stevia, egg (whole or white) with a pinch of baking powder to help browning, almond milk to thin to crepe consistency . Cinnamon and maple extract or vanilla to flavor. Crisp on griddle
