Favorite salad?

I have come to grips with the fact I am really not a hugh veggie lover. I need to eat more greens so am going to try to add a small salad to my protein instead of hot veggies.

What is your favorite salad that is good but not killer on the calories?

You can eat a ton of fresh spinach for not many calories. Ill make a huge salad with 3 big handfuls of spinach, 1 cup of white mushrooms, jalapenos, a little red or orange pepper for some color and a can of baby shrimp. I use either maple grove farms sugar free dressing or Kraft light Italian. The whole thing is less than 150 calories and is huge.

Maybe you could incorporate your protein in with the salad. One of my favorites is mixed lettuces and greens, slices of purple onion, lots of dried cranberries (craisins), plenty of big walnut pieces, a browned chicken breast (boneless & skinless) all in slices, and a dressing of raspberry vinaigrette. Sometimes I add a bunch of those little baby mandarin orange sections too.

Another good one is mostly baby spinach leaves with some other mixed fresh greens, pecans, lots of crumbled bacon, slices of purple onion, hard boiled eggs, mandarin oranges, dried cranberries, bleu cheese crumbles, and a dressing of maple vinaigrette.

I also use fresh spinach for salads since I have a raised bed than is producing more spinach that two humans could ever consume. Tuna from a pouch on top and some kind of light dressing.

Add some feta crumbles to this, and you get MY favorite!!

Greek Chicken salad is my FAV!! Romaine and spinach with diced cucumbers, red oinions and pepperoncini's, Feta cheese ans Lemon Oregano Vinaigrette.

Or I have recently feel in love with Red Wine Vinaigrette and am looking to make it without oil soon!

I like frozen baby artichokes, thawed and pressed to remove the water, feta cheese, a small tomato, some red onion rings on chopped romaine. I also add avocados when I have some ripe. The problem with my salad is the blue cheese dressing that P sprinkle on top. Not high carbs, but it does pack on the calories.

I salads
Bag of mixed lettuce leaves, fry up bacon and halloumi for crunch, few sliced black olives and gherkins with a homemade creamy dressing (yoghurt, cream cheese, cream, garlic powder, onion powder, black pepper)

For all my salads - cole slaw, spinach, lettuce, etc I make my own dressing:

Splash of water, vinegar, splenda, pepper. If you like it sweet add more splenda, just mix and pour on the greens! Just love this sweet-sour!

butter lettuces torn up with org apple cider vinegar (or acv made into a vinaigrette) some kind of hot meat (ground beef or turkey, leftover meatloaf cubed or chopped steak) or can of tuna, chopped up cucumber, maybe some pea pods, and either a chopped small apple, pear, or segmented orange. Coarsely chopped nut of some kind or whole pistachios. Make a big bowlful of salad and enjoy the whole meal. Always love a hard boiled egg on greens, or if feeling french a freshly poached egg done in red wine on a pile of mixed greens is fabulous!

Spinach, strawberries, feta or goat cheese, sunflower/pumpkin seeds, (maybe chicken) with homemade orange olive oil vinaigrette.

Spinach or baby spring mix with watermelon and goat cheese with homemade vinaigrette.

Can you see a pattern? mmmm cheeeeeese and fruit

Oh, and throw bacon on anything. Bacon makes the world better. BLT salad would be good...bacon, tomato, avocado, and spinach. I've been doing "BAT" roll ups on my up days. Avocado (w/ garlic powder, salt, and lime) with chopped tomato and crumbled crispy bacon rolled up in cheese. DELICIOUS.

I also like to use cottage cheese as dressing on any salad (instead of dressing).

I love my salads! I use big bags of mixed lettuce..and add spring onions, capers, hot sauce and bacon ranch dressing (walden farms)..I love lots flavour, so I usually add a handfull of peppery rocket too...then as much tuna/feta/cheddar as I have cals for...and I get a HUGE bowlful to fill me on my DD!
