Egg Salad

I'm a little scared to post this... Please be nice

I eat a lot of this...
Its like the lazy me, says, just eat this and you're okay...

But I've went through almost 18 eggs in a week...
Is this bad?
I'm in ketosis, will weigh tomorrow...

Its like this is my go to when I'm too lazy to cook or when I don't really feel like anything else.

Some do what's called an Egg Fast and eat 10-12 a day for a week. Lol. So you should be okay.

For me the biggest danger is getting so bored with it I couldn't stand to eat another egg for months. Then what would I do when I wanted a good quick cheap meal.

I swap between homemade quiche and scrambled eggs for breakfast so I eat at least 3 eggs a day and probably go through 2 dozen a week. The quiche is really my lazy breakfast because I make it ahead of time and pop it in the microwave. (I use 7 eggs and a cup and a half of heavy cream in my quiche.....my pie pan is huge. I share it with my husband and get several days out of it. the filling is usually shredded cheddar and sauteed peppers and onions)

If you are satisfied, losing weight and feeling good and healthy that would lead me to believe there is nothing wrong with 18 eggs in a week. Who cares if someone does think it's too much...if it works for you, that's what counts!

You are probably ok since most of us here tons of eggs I know I eat a minimum of 15 a week... If you are really concerned how it's affecting you though, you could always go get a blood test to have your cholesterol checked and put your mind at ease.

Yummy! I love egg salad and never get tired of it. For me, it's a great way to re-start and get back into ketosis and all the fat fights cravings.

Easy go-to meals for this week:

meatloaf- 2lbs ground beef, 2 eggs, parm. cheese, cheese, spices.
Char's killer quiche- look it up in the recipe room- the egg to cream ratio is perfect!
bigflopman's breakfast casserol

This is what I've been surviving on the past week. Delicious! I try and have one cook ahead day to prepare me for the week where I make one casserole, meatloaf or protein dish, and a lc desert to get me through the week. It helps me stay on track.

Off to make some egg salad...

I've eaten 18 eggs (or more) in lots of weeks. I almost always have 2 eggs for breakfast, and any eggs I have in salad or otherwise are on top of that. FWIW, my cholesterol was 142 last time it was checked - so much for eggs wreaking havoc with one's cholesterol.
