What is your quickest, yummiest meal for one?

I'm the only one that follows LC in my home. Many nights I am able to share the main dish and just make me a different side. BUT....sometimes the fam wants something that is totally not something OP. I have a few things I do but was looking for some new ideas.
So, what is your favorite easiest meal for one?? Also, I am not a leftover eater so alot of people suggest making a casserole and heating it up, but I know that I won't do that. Thus the "for one" part of the request.

I'll share one of mine....

Place chicken breast in baking dish and cover tightly with foil. Bake at 375 for about 30 mins. (or until done). Take out of oven and cover generously with mozzerella cheese, pepperoni and parmesan cheese. Put back in oven and cook until cheese is melted. Serve with a side salad.

I brown some ground beef in a pan, add chopped pizza toppings (mushrooms, onion, whatever I have). Top with mozzarella cheese and sliced pepperoni. Let cheese melt and dot with pizza sauce.

I like to make a White Castle Pie (Linda Sue recipe) and simply take a slice out of the fridge and nuke it when I need a quick meal! Also, steak in the grill pan is a standby for me. Always easy, always delicious.

1) Melt one tbsp butter. Fry 1/3 c chopped onion and 1 c frozen chopped spinach in it (maybe 5 minutes?). Add two scrambled eggs and a few dashes each of hot sauce and nutmeg (cuts the mineral taste of the spinach). You can add a torn-up slice of cheese while the eggs are cooking, or a couple tbsps grated parmesan.

2) Slice half a pound of zucchini. Fry in a tbsp of olive oil with 1/3 c chopped onions. When they look cooked, add 1/3 c canned chopped tomatoes, and 14 slices (one serving according to the package) of pepperoni, cut in quarters. Keep cooking until hot. Stir in 2 tbsp parmesan cheese (garlic and Italian Seasoning is good with this, too).

3) Form half a pound of ground beef into two burgers. Fry. Top with mustard. Cheese optional.

What I do is keep pre-made hamburger patties in the freezer. They are already seasoned and individually saran wrapped. I can defrost in microwave really fast and cook up 1 or 2 for me for a quick meal.

I fry some bacon strips, bake a big omelet, put the bacon on it and some cheddar cheese. Roll it up and done!!!! Sooo good!

Chicken quesadilla with pre-cooked chicken strips and LC wrap. I make this with my quesadilla maker. Since the chicken is already cooked...it's quick. No leftovers. Same goes for enchiladas.
BLT or turkey club roll-ups with mayo and no bread
Chicken wings (heat and eat as many as you like)
Small pot of soup with chicken or beef broth plus some veggies
Hot dogs (good ones without additives)
Crack slaw
Salad
Veggies and dip
Stuffed mushrooms and a small salad
Mushroom Pizzas - Portabellas with pizza sauce and toppings.
Stuffed Pepper- Any meat combo...taco meat, ground chicken, sloppy joe, lasagna etc.

Brown ground beef in pan with a little onion.....add a good size spoonful of cream cheese, a splash of HWC, and a sprinkling of parmesan cheese. Mix it up and eat. Goes good with a side of broccoli.

Lately, my fav is a tuna melt. If I have an oopsie I will put it on that but not crucial. It is just as tasty and satisfying in a bowl.

My 'old fav' was egg drop soup.

Whenever I cook up a favorite lc meal, I make a ton of it so I can freeze it in individual sizes. My freezer is a virtual buffet of yummy meals.

I am a very lazy cook, so when I do cook, I cook a LOT.

Absolute quickest?

I chop up some chicken breast and throw it in the skillet with a chopped up bell pepper. I add some Jamaican jerk spices and olive oil. A few minutes later, it's done.

Ground beef, cooked, drained, seasoned.....I add in anything else that seems good!! be it veggies, cheese, and so on...I really like making on a cold day, my LC chili... Just the basic ground beef, chili spices, chopped onions, peppers, cauli, etc and can crushed tomatoes if I have any on hand, brown, drain, season, add chili mix, veggies, simmer...Delish and filling!!

My go to i meal is 2 burger patties. Cooked in a skillet. When they are almost done (they only take 5-6 minutes) I throw in some sliced onion and cook just a few minutes. Tada, hamburger steaks!. Lol

Prosciutto rolls with fresh mozzarella and olive oil (with spices and garlic salt). Calls for tomatoes but I don't like raw tomatoes so sometimes I roll raw spinach in them. mmmmm so salty and fatty with olive oil and cheese....

Quickest, yummiest meal for one: Layer mozzarella, pepperoni, olives and onion on a plate. Nuke for 30. Instant pizza toppings! Simple and filling.
