MIM "sandwich bread"

I know so many people have posted these fabulous MIM recipes. I love the muffins, but wanted a version that had a more bread-y feel to it, so I could have toast or a sandwich. I feel like I have accomplished that adding some coconut flour to the mix so I wanted to share my recipe.

So..my ingredients are:

2 eggs
2 T of butter or coconut oil
1/4c flax and almond meal mixed (I do half of each)
1 1/2 -2 T coconut flour (I have found I need closer to 2T when I use C. oil)
1/2- 1 tsp baking powder
pinch of salt
various seasonings - depending on what you want...sweet vs. savory

I mix all the wet ingredients and then the dry and pour the dry into the wet and whisk it all together. Sometimes adding the coconut flour separately I get clumps. This seems to be eliminated if it is mixed with the almond and flax seed meal.

I put mine in a square plastic sandwich container. Definitely too much for a coffee mug, but maybe a cereal bowl would make a round bun shape. I wanted a square piece of bread. =)

Cook for 1.5 to 2 mins depending on your microwave til the center is no longer wet looking. It fills it about half way up as it bakes. Then I slice it in half after it cools a bit and I have 2 pieces of bread for whatever
I need.

Last night I had a peanut butter and raspberry jam sandwich. It was SOOOO yummy. I put one packet of spenda in the bread instead of any other seasonings and then toasted it just a bit in the toaster over so the "bread" was a bit toasty! YUMMY.

Hope you all enjoy! I love it and it seems much more like a Bready texture rather than muffiny ...if that makes any sense. =)

This looks like a great recipe, but I might try cutting it into 4ths because some of us can't eat a 500 calorie bun.. and some of us certainly can.

It would absolutely work for a hamburger. And I have also done it in a smaller like fruit bowl and only used half for a more bun like shape. It is awesome for grilled cheese. I have done that too. =) Hope you all enjoy it. I live the texture the mix of all three flours provide! =)
