Start Date: August 2002
Whoopie Pie-Cookie *pics*





1/2 cup vanilla whey
3/4 cup almond flour
1/4 teaspoon baking soda
1/4 cup unsweetened cocoa powder
1/4 cup peanut butter
5 tablespoons of erythritol
4 tablespoons of cream

Preheat the oven to 400o
Stir together above ingredients. With a medium scoop, make 8 small balls. Place on parchment paper that is on a cookie sheet. (this next step can be omitted) Using the back of a mallet that is lightly spayed with Pam, press each cookie lightly.
Bake for 7-10 minutes, cool.

Whoopie Filling
1/4 cup solid vegetable shortening or unsalted butter
3 tablespoons of powder
erythritol
1/2 teaspoons vanilla extract

1-2 packages of Splenda
Blend together until smooth

Spread each cookie with filling and add top

How sweet are these? I notice you just use erythritol which isn't as sweet as sugar.

The cookies are soft you can cook them longer but I would try them soft at first you would be surprised they are in between a cake and cookie

LOL I looked at my photo and saw five cookies there... so the recipe makes 5 cookies and just enough filling for them all

Thank you for this recipe.

However, I don't think it's quite for me... something felt weird as I ate it, knowing that the filling is just basically a slab of butter whipped up.

No different than commercially made ones, except its probably lard; at least, it used to be. Just some sort of semi-solid fat whipped up with sugar.

I haven't made a filling like the one above since I was eating hc..but yup, that is what it is, sugar and shortening! I have made many a frosting with those two ingredients. And I luuuvvved it! I have made whoopie pies with a cream cheese and cream filling. They are very good! One other thing you might try is making a chocolate ganache, putting it in the fridge, then when it is firm, whip it and put THAT in-between these delicious whoopies!

A lot of butter cream frostings are just basically butter and sugar. The filling was taken and tweeked from a "whoopie pie" recipe

Butter is basically heavy cream shaken or stirred into butter. Buttercream frosting is also made with shortening or butter. YUMMO.

Mmmm! I brought the leftovers to work with me. I just ate one straight out of the fridge and it tastes a lot better.

Maybe this whole eating sweetened butter thing is for me after all!

These are really good. I added an egg as your original recipe didn't call for one. I made them smaller too about the size of an oreo and got more out of the batter this way. I also wrapped each cookie in waxed paper and froze them. Oh they are so good right out of the freezer.

My daughter-in-law makes whoopie pies during the holidays, she puts crushed peppermint candies in the original filling recipe. I think I will will try and find some sugar free peppermint candies and give it a go.

I don't think I have ever had cream cheese filling but it sounds sooo yummy I may give that a try also. But I think your idea for chocolate ganache is the ultimate chocolate lovers Whoopie!!
