Stuffed peppers using Quinoa?

Has anyone made stuffed peppers using Quinoa in place of rice?
I am CRAVING stuffed peppers, and DH just bought some Quinoa.

Stuffed Peppers

6 bell peppers, any color
Salt
cooking oil (olive or vegetable, personal preference)
1 medium onion chopped
1 clove of garlic chopped (or 1/4 tsp. garlic powder)
1 lb ground beef
1 1/2 cups of cooked quinoa
salt and pepper
1/2 cup sugar free ketchup or 1 small can tomato sauce with a bit of sweetener.
1/2 tsp of Worcestershire Sauce

Removed tops and seeds from peppers, drop into salted boiling water for few minutes, drain, and set aside.

Saute onions in the oil, when nearly translucent, add the garlic if using, cook for another minute or two.

Mix the onion, quinoa, beef and salt and pepper with your hands and then stuff into the peppers. Mix the tomato sauce or ketchup with the Worcestershire and pour over the top of the peppers. Bake at 350 for 45 to 60 minutes or until the meat is done.

Pretty basic, and can be tweaked like crazy, by adding spices (Mexican seasoning or Italian seasonings), add cheese, topping with enchilada sauce, add green chiles, etc.

What I did was just google "stuffed peppers", picked out one I liked, and instead of using rice I replaced it with Quinoa. I didn't used the same amount suggested for rice, but about half because Quinoa is small and a cup of Quinoa is a lot more than a cup of rice! I made it that way and LOVED it!

I did cook the Quinoa first, though and then added it to the mixture before stuffing!

Yes it is but it's also one of those things we find that agrees with a LC WOE for those of us who can do higher carbs. It's a seed, really, and not a grain and that could be the reason.

I use cauli rice in my stuffed peppers. It works great.

There are tons of variations on these that work well IME. Pizza sauce and parmesan, taco type filling, sausage and cream cheese, etc.

I like doing small chopped veggies that have been sauteed until al dente only. Thinks like onion, mushroom, bell pepper, zucchini, yellow squash and seeded/peeled fresh chopped tomato. I also sometimes use a little cauli rice with it all and combine it with the meat. Then top with cheese. Also, sometimes spiced cottage cheese with an egg and cheese in it is good combined with the veggies!
