WOE: Eating healthy and portion control
LC and LCal Garlic/Dill Coconut Milk Salad Dressing

OMG, this is amazing dressing, very low carb and low calories, too!

Ingredients:

8 oz Coconut Dream Coconut Milk or any lower calorie coconut milk
2 cloves minced garlic
2 tsp dill weed
1/4 tsp Xanthan Gum or another gum to use as a thicken
Salt and pepper to taste
1 drop or 1 packet sweetener (optional)

Mixed everything together and refrigerate for at least 2 hours to meld al the flavors together.

Makes 8 servings (each serving is 2 TBS)

Yes, and very garlicky, but I love garlic so this is just right for me!! Next time I will use a little less Xanthan Gum because it was kinda thick for me.

Thanks so much for the recipe. Sounds yummy. I have added it to my collection.

Yes, I think mixing up diets or WOE, we really shouldn't be calling this a diet, is a good thing. Getting lots of carbs and sugar will never be a good thing, but in moderation I think it helps the mind and makes one a bit happier and you don't feel deprived.
