We love LindaSue's pimento cheese:
Linda's Low Carb Menus & Recipes
Only tweak we did was to add about a half-packet of splenda to it. I could eat this stuff all day long!

Now I notice that she's got a newer version:

Haven't tried it, but I'm sure it's good stuff, too.

Pimento Cheese Wendalina
6 oz. cream cheese
1/2 cup white cheddar cheese grated
3/4 cup sharp cheddar cheese grated
1 cup Monterey jack cheese grated
1/2 cup mayonnaise
1 teaspoon red wine vinegar
4 oz. pimentos chopped
1/2 tsp. onion powder
1/2 tsp. garlic powder
1 dash hot sauce or more
fresh ground pepper to taste
Blend in the food processor. Cover and refrigerate for about an hour.

Bobby's Pimento Cheese
Recipe courtesy Paula Deen
Prep Time:10 minInactive Prep Time: -- Cook Time: --
Level:
Easy
Serves:
3 cups

Ingredients
1 (3-ounce) package cream cheese, room temperature
1 cup grated sharp cheddar
1 cup grated Monterey Jack
1/2 cup mayonnaise
1/2 teaspoon House Seasoning, recipe follows
2 to 3 tablespoons pimentos, smashed
1 teaspoon grated onion
Cracked black pepper
Directions
Using an electric mixer, beat cream cheese until smooth and fluffy. Add all of the remaining ingredients and beat until well blended. It can be used as a dip for crudite or as a sandwich filling.
House Seasoning:
1 cup salt
1/4 cup black pepper
1/4 cup garlic powder
Mix ingredients together and store in an airtight container for up to 6 months.

Wow .. I never knew people put anything else in pimento cheese other than mayo, red rind hoop cheddar, and pimentos. I will have to give some of these a try.

I like pimento cheese slathered over baked chicken tenders or HB patties. I like to dip veggies in it. I like to dollop it in my veggie soup and stir til it melts. I like to eat it by the spoonful. I like to eat it with crackers and as sandwiches when I'm not being so carb concious.

I like pimento cheese in lettuce as a wrap.......yummo!!

It's also great to stuff celery sticks with or jalepenos.
