Pimento cheese

My Aunt made this the other day and it was amazing! I dont even like pimento cheese but this stuff was da bomb... I wanna make it but wonder if there are any tweeks I need to do?

6 ozs cream cheese

1/2 cup white cheddar cheese grated

3/4 cup sharp cheddar cheese grated

1 cup monterey jack cheese grated

1/2 cup mayonnaise

1 teaspoon red wine vinegar

4 ozs pimentos chopped

1/2 tsp onion powder

1/2 tsp garlic powder

1 dash hot sauce (we like Texas Pete) - or more if you like it spicier

fresh ground pepper to taste

I blended mine in the food processor but a hand mixer will work

Cover and refrigerate for about an hour - YUM!!!

This is very close to mine-mine has no vinegar or onion-garlic p. but has 2 T grated onion. Looking at this and knowing how good mine is, I'd guess this will be awesome. I use Paula Deen's recipe.

made this for Easter and it was sooooo good! I had some almond crackers but I actually preferred the celery sticks with it

I make Paula Deen's recipe, too. But I like the idea of the three grated cheeses. DH is not a mayo fan so I use one or two tablespoons of it, then the rest is sour cream. Real Southerners (like DH's family members ) make their own mayonnaise for this. (or at least use Duke's !!)

One caveat: do NOT use pre-grated cheese. Grate it yourself. The difference is amazing.

I completely agree about grating the cheese....world of difference and ALWAYS use Duke's.. is there any other kind

There is - Best Foods/Hellmans! Why? Because we don't get Duke's out here. I'd like to try it someday though!

Well now, here in NC, we've just always made it w/ grated American cheese, mayo, pimento and pepper. We do have a local company that has now been selling the family recipe for many yrs. If you ever get a chance to try Musten and Crutchfield pimento cheese, do so, really good. And ole yes, I think we all have our favorite mayo, mine is Kraft mayo, what I was raised on but I actually like all mayo. Hubby was raised on miracle whip and I always have that on hand but don't eat it myself.

I've always wondered...what is American cheese? I've never seen it where I am. Is it just orange colored cheddar?

American cheese is the individually wrapped cheese slices sold by Kraft, etc. I actually buy mine at Costco or Sams and freeze in portions. Much better tasting and texture than the wrapped per slice stuff.
