Kevins Biscuit Recipes

I had a recipe, I think maybe it was from Kevinpa. I have looked all over the recipes we have from him and can't find it. It seems you used coconut flour and the only one I can find is a drop biscuit. This one you rolled out, cut with a biscuit cutter. It made 5 biscuits and I liked it the best of any of the recipes I've tried. Does anyone know what I'm referring to and happen to still have this recipe? I hope........ Ann

I have the cheddar one Soobee, it's a drop biscuit and the other has beans and the one I'm referring to didn't have beans. I was sure I had it in my recipe file, but I don't seem to. But thanks................... Ann

Could this be Kevin's Biscuit Bake Mix?

Bisquick Homemade Low Carb (Kevin's?)
4 cups (400 grams) Carbalose Flour
1/2 cup + 2 Tablespoons Buttermilk Powder
2 Tablespoons Baking Powder
1/2 Tablespoon Salt
3/4 cup Trans-Fat Free Crisco

Yield: Approx. 6 1/2 cups.

In my measures, each cup weighs 103 grams, making each cup 460 calories and 19 net carbs. It's a bit higher in carbs than I had hoped, but, frankly, if it enables me to use it in sweet recipes easier than CarbQuick, I can live with a couple extra carbs.

Humm..I might have to try this mix and see if it will work for Bisquits..

Anyone else want to give it a try??

Here is the one I have from Kevin, it doesn't have coconut flour though.


(copied and pasted from Kevin's original post)

Kevin's Carbquik Biscuits

I made a small batch as a test but it could easily be doubled.

1 cup carbquik
1/4 cup resistant wheat starch
1/4 cup wheat protein isolate 5000
1/2 teaspoon baking powder
1 1/2 teaspoon DiabetiSweet (or granular erythritol/splenda mix)
2 tablespoons softened butter
3/4 cup heavy cream

In a mixing bowl, combine ingredients until the dough forms a ball. Turn onto a flour dusted surface.(I used WPI) Fold the dough in half and knead a half a dozen times adding enough flour to keep dough from sticking to your hands.
Carefully roll the dough out to 1/2 inch thick. Then with a 3 inch flour coated cutter, cut dough into bisquits.
Place on a cooking spray coated baking sheet leaving an inch in between each bisquit.
Bake in a 500 degree oven for 10 minutes or until golden brown.

Made 5 bisquits at 2.5 carbs each.
