Quick and easy Chili
I just whipped this up-- based on a Dana Carpender recipe (slightly lower carbs my way)
2lbs ground beef
1 large onion (mine's about 5oz, which is also about 1c of chopped onion)
4T chili powder
2 cans black soy beans (I used the Eden ones) - drained
1 can no-sugar tomato sauce (I use Hunts)
1-2 tsp cumin
1-2 tsp salt
I like to add 1T of oregano flakes
pinch or 2 of chili flakes (to taste)
Cook the onion a bit in a wee bit of oil-- just soften, brown a little.
Add the beef and brown until there's no pink-- drain if there's a lot of liquid.
Add everything else - drained beans, tomato sauce, spices.
Simmer on Low for at least an hour, check after 30 min and add water if needed. Keep cooking on low for the full hour, and longer if you want.
Serve with LC toppings-- cheese, green onions, sour cream.
