Chicken, Spinach and Artichoke pie

(or quiche)

6oz boneless skinless chicken breast, diced small
1 can quartered artichoke hearts in brine, drained well and cut if needed
1 cup frozen chopped spinach drained well
1 tsp minced garlic
1 T olive oil
salt and pepper to taste
5 ex large eggs, beaten
1/3 cup mayonnaise
1/2 cup shredded parmesan cheese

Spray a deep dish pie plate with cooking spray and preheat oven to 350f. (I use a toaster oven).
Saute chicken and garlic in olive oil until cooked through, add the spinach and artichokes, salt and pepper and remove from heat to cool.
Spread evenly in the bottom of the pie pan.
Beat eggs with some salt and pepper, then beat in the mayo then the cheese.
Pour over the mix in the pan, then tap the pan to settle it.
Bake for approx 30 minutes or until just set in the center, then let it cool and it will set up more as it does.

5 servings, each serving is:
302 cals; 3.6g carbs; 1.7g fiber; 21g protein.

I've made this before adding a layer of sliced roma tomatoes and sliced green olives and it was very good that way, too

Oh my...I just saw a can of artichokes in my cupboard and was wondering what to do with them..

PS: You could use the chicken from a rotisserie one...make it even easier.

Question for any of you: I love fresh artichokes and would love to steam my own and use the hearts for this......thinking how many do I need??
