Bread Pudding

I don't know how many carbs are in this. I use the homemade LC Milk so the carbs would be different if you used the store bought kind.

This is one of my favorite breakfasts, it's very rich and stays with you a long time.

Bread Pudding

Make 3 one-minute muffins…
1/4 cup almond flour
1/2 teaspoon baking powder
1 packet Splenda
1 egg
1-2 teaspoons Butter

Mix the dry ingredients in a custard cup or cereal bowl. Add egg and butter; mix well. Microwave for 45 to 50 seconds. Pop out of bowl and cool just enough to handle then cut into 1-inch squares.

4 tablespoons melted butter
6 large eggs
1-cup Splenda or liquid equivalent
1 teaspoon Black Strap Molasses
1-tablespoon vanilla
2 teaspoons cinnamon
3 cups LC milk

Preheat oven to 350°.

Spray a 2-quart casserole with cooking spray and spread muffin squares evenly across the bottom of the casserole. Drizzle with melted butter.

Beat eggs in a large bowl with a wire whisk until very well beaten. Beat in Splenda, molasses, vanilla and cinnamon mixing until very well blended. Slowly add in milk mixing until well combined.

Pour into a buttered casserole and bake for 1 hour or until knife inserted half way between the edge and middle of the dish comes out clean.

Serve warm or chilled.

You would probably want to check this after 45 minutes...my oven seems to cook a bit slow.

OK, I'm looking at the picture, and the diced muffins clearly didn't come from just a quarter cup of almond flour... Is that the recipe for ONE muffin and you are saying to make three of them? I read it as making three small muffins from the recipe with 1/4 cup of almond meal.

It really looks good. I need to try this with flax muffins.

I made 3 of the muffins... each muffin contains 1/4 cup of almond flour so all three muffins would add up to 3/4 cup of almond flour, 3 eggs and so on.

I hope that makes more sense.

I cooked all three of the muffins together in one large microwave bowl that has a cover. I cook them for 2 minutes, covered, then let the bowl sit on the counter untouched until it has cooled. The residual heat will finish cooking the middle of the muffin. Of course microwaves all cook differently, so what is the right time for my microwave may not be right for yours.

Per Batch: 2111 Calories; 170g Fat; 112g Protein; 43g Carbohydrate; 12g Dietary Fiber; 31g Net Carbs

I used to make a hot butter sauce for my bread pudding, here's the HC version. Thinking about making some for this and just subbing the sweeteners...

Sauce:
1 cup butter
2 cups sugar
1 cup cream or half-and-half
2 teaspoon vanilla extract

To make the sauce, combine all ingredients in saucepan over medium low and cook 10 minutes or until sugar is melted, stirring frequently.

This sounds amazing... it should work just fine with Splenda. I'm going to give it a try.

Glad you like it. I like to eat mine cold in the morning with some hot bacon on the side. The contrast of the hot and cold...sweet and salty is very good.

I fry up about 5 pounds of bacon at a time and freeze half and keep the other half in the frig... 3 slices on a paper towel in the microwave for 30 to 40 seconds is just right.

I LOVE bread pudding, but have never tried a lc version. This is on my list of new recipes to try. The sauce recipe, below, sounds really good. I've never tried it, and I don't where I found it...so I don't know who to give credit to.


VANILLA, LEMON, or NUTMEG SAUCE
Makes 2 c.

3/4 c. sugar substitute
2 T. (or more) ThickenThin not/Sugar thickener
2 c. boiling water
¼ c. butter
1 T. vanilla, or 2 T. lemon juice with 2 T. grated lemon rind, or 2 t. nutmeg

Mix sugar substitute and thickener in saucepan. Gradually stir in water. Boil 1minute, stirring constantly. Stir in butter and flavoring. Serve hot over warm cake.

OOOOOOOOOHHHHHHHHhh YUM!!!

I have been dying to make this recipe for Leek Bread Pudding
leek bread pudding | smitten kitchen

But obviously the big ingredient barrier is BREAD.... or was !!!

The desciption in there of having it along side a prime rib roast with the beefy drippings drizzled over the savory bread pudding had my mouth watering!

Wow!!! That does sound good. Thanks for the recipe...I have some leeks in the freezer I put up when I found some on sale a while back. I'm going to give this a try.

Oh YUMMMMMMM! I just made this for breakfast (more like 10 breakfasts!) and it is soooo good! I added an apple. I put down half the bread, sprinkled it with half the butter and then covered it with a very thinly (think mandoline) sliced apple. For me it's definitely worth the extra 21 carbs for the whole pan (like 2 extra per serving). I cooked my triple batch of muffins in a pie plate in the micro for 3 minutes - perfect! Thanks for this recipe. It will be my new favorite breakfast (unless I eat if for lunch and dinner too!!!).

That sounds good.

I like a lot of bread in my bread pudding and I like to make it sweet and real eggy with a lot of cinnamon ...it's a lot like having French Toast in the mornings without all the mess. Fresh strawberries or fresh peach slices with French Cream on the side makes it a special treat.

I made this yesterday and we all love it thank you!

I would like to make it again with macadamia nut chunks blueberries and a white chocolate sauce

Can't find a white chocolate sauce recipe tho...any ideas??
