Official Chips for Guacamole, Salsa, etc.
There are a lot of ways to make low carb chips, but the problem with them is that they tend to be a bit carby and high in calories. I personally don't look at a bowl of chips with some dip and think,"A sensible portion would be three chips with dip." kwim? One wants to get into the dipping GROOVE and nosh for awhile. That's the real chip experience.
So you already know how to make these, but don't dismiss the tweak, ok?
Take a slice of processed cheese.
Cut it in half and then in quarters.
Stack these quarters and slice into five even strips.
You will have 20 little strips of cheese. This is the key part. Lots of LITTLE skinny strips.
Put them on parchment paper (I use the shiny side of freezer paper) LEAVING LOTS OF ROOM BETWEEN THEM and microwave. I suggest doing it in two batches, about 30 seconds each. They spread, puff up, crisp, and brown a bit.
Remove to a plate pretty soon. They cool fast.
By cutting them so small and leaving lots of room between them for them to spread, that little slice of cheese become 20 respectable sized chips to dip with, for a total of whatever your cheese slice "cost." Mine was 70 calories and >1 gram of carbs.
If you make a dip that is nutritious enough to be your meal, you can dip away with impunity and not blow your woe.

You can further add to your "cheese chip" enjoyment by sprinkling it with some chili powder before nuking it - particularly good if your "dip of choice" is guacamole!
