What to do with leftover steak?

We had friends over this evening and grilled waaaay too much steak. It's grassfed and too expensive to throw out! I am not a fan of leftover steak - I like it hot off the grill or not at all. What can I do with this meat? Casseroles? I don't really like steak on salads, too chewy, but that could be an option. Any Mexican-type ideas that don't involve tortillas?

I posted something I do on another thread. Slice it thin and put it over arugula and then drizzle truffle oil over with with a little squeeze of lemon....Yuuuuummmmmm.

I don't know if we've ever HAD leftover steak!

('m kidding, every now and again we cook too much.) I love it sliced and heated with cheese, tucked into an LC tortilla or pita bread. Little cubes dipped in LC BBQ sauce or dill dip or salsa. Stir-fried w/ onions and cauliflower for a mock hash. Definitely with eggs in the AM.

I know you said you didn't like steak on a salad but what about a steak salad?? It still might be too chewy for you but you could try it.

I slice left over grilled steak very thinly across the grain. I toss it with thinly sliced onion, lots of basil, garlic salt, a nice olive oil and some red wine vinegar. We love it.

Stirfry! With all your favorites veggies, for example with aspargus, mushrooms, and onions, or broccoli carrots and snow pea pods, or multi colored peppers and onions. Don't you dare waste that steak! Use a good olive oil, garlic, and splash some dark sesame oil in their too.

I personally am the same way about steak. So I make carne asada plates. Cut in bite size pieces fry quick to heat in a bit of oil. Put it on a plate, top with grated cheese, tomatoes, lettuce and guacamole. Yum!

Steak sandwich! Use whatever you like for bread (oopsies, the cheesebread rounds are REALLY good, or we use Ezekiel bread) and slather the bread with mayo/good mustard, then the thinly-sliced steak, a thin slice of whatever cheese you like (good ones are pepperjack, extra-sharp cheddar, Jarlsberg) and grind a little fresh black pepper over the steak. You can do lettuce, tomato, roasted red peppers, Ortega chiles, too, but I don't like to hide the flavor of the steak too much.

I think we will do the fajita thing tomorrow. DH will have tortillas. The steak is pretty much unseasoned, just S/P and garlic. How can I give it some Southwest flavor and warm it up without further cooking it? Cumin, maybe paprika, what else?
