Spring/Easter Coconut CupCakes w/Pic

Decided to mess around with the 1 minute coconut cake/cupcake, but this time make a cupcake to bake in the oven. With a few tweaks, they came out very much like a real cupcake, I'm very pleased! I made a cream cheese frosting (recipe following the cupcake recipe), coloring it green to look like grass, sprinkled a little coconut on top and added a sugar free chocolate egg to make them look festive!

Here is what I came up with. Sorry, no Nutritional facts on these.

SPRING/EASTER COCONUT CUPCAKES

Dry Ingredients:

1 scoop Vanilla Protein Powder
1/3 cup Coconut Flour
1/4 cup Almond Flour
2 Tbs unsweetened Coconut
1/8 tsp salt
1/2 tsp baking soda
1 tsp baking powder
1/2 cup sweetener of choice (I used Ideal Sweetener)

Wet Ingredients:

2 Large Eggs
2 Tbs coconut oil
1 tsp coconut extract
1/2 tsp vanilla extract
2 Tbs DeVinci Coconut Syrup
3/4 cup half and half or light cream

Directions:

Preheat oven to 350 F

Mix all dry ingredients in a large bowl. Add the coconut oil, melted if needed, eggs, coconut and vanilla extracts, DeVinci Coconut Syrup and half and half or light cream to the dry ingredients.

With mixer on medium, mix all ingredients until well blended. The mixture will be lumpy, but that is what it should be.

Line a cupcake pan with cupcake papers, lightly sprayed with butter flavored cooking spray.

Fill 3/4 of the way full with batter and bake for 25 to 30 minutes or until toothpick inserted in middle of cupcake comes out clean and cupcakes are light golden in color.

This made 8 regular sized cupcakes, coming to the top of the cupcake paper.

COCONUT CREAM CHEESE FROSTING:

Ingredients:

4 oz room temp Cream Cheese
1 Tbs unsweetened Coconut
2 Tbs Powdered Erythritol
1/2 tsp vanilla extract
1 Tbs DeVinci Coconut Syrup
Food Coloring of Choice

With mixer, combined all ingredients and mix until smooth. Ice cupcakes and ENJOY!!

Wow, those look awesome, Beeb! I'm gonna try them but I will make them vanilla, as DH isn't a huge fan of coconut. If these come out like vanilla cupcakes he will send you hugs and kisses!

I made these this afternoon..very good. I had some leftover coconut milk , so I used that in place of the cream and the oil..Worked great.. Thanks, beeb..

Carolyn, thanks! Glad you liked them. How would you describe the texture? I found them to be like a carrot cake texture but dryer.

What do you think? I so value your opinion, you are one of my heroes when it comes to baking LC goodies!!

I have these in the oven right now! Will let you know how they come out.

I did some "tweakage" to make them vanilla instead of coconut though. Will post those changes if they're good!

They're out of the oven and look good!

I also did a major tweakage of Jennifer Eloff's "Better than Betty Crocker" frosting.

Once they're cooled, assembled, and taste-tested I'll let you know what I think!

My gosh Char hurry up already

We are all waiting.

Beeb not only does the recipe seem right on, but you
did a lovely job of decorating. They look so St. Paddy's.

We are full on pressure cooked corned beef in beer, with saute of
cabbage, glazed carrots(we make exception on this holiday)
and Irish scones.

I would love to have served these as dessert.

It's just a tease though because I had a "wee nip" of Stoli Razberi before dinner and I fear my remembrances of my tweakage will not be very accurate - but I promise to post them all tomorrow.

Suffice it to say that is a buttercream (no cream cheese) icing. I haven't eaten my cupcake yet but DH did and he pronounces it "droolworthy" - not EXACTLY the same texture as a REAL cupcake but close enough!

Well I just ate half a cupcake (too full of Reuben sandwich to eat more) and I agree with DH - the texture is not "exactly" like the old cake-mix cupcakes we all used to eat and love, but it's close enough, and the buttercream is really good, if you miss that "wedding cake icing" mouthfeel and taste! DH loved it.

Here is what I did for the icing, and it's a spinoff of Jen Eloff's "Better than Betty Crocker" frosting, except I didn't have any powdered milk, didn't want to use cornstarch, and just generally gave it a tweak here and there!

LC Buttercream Frosting

˝ cup Ideal sweetener
PINCH powdered NuStevia no carbs sweetener (bulk)
1/4 cup Designer Whey vanilla protein powder
1/2 tsp Thicken Thin Not/Sugar or Not/Starch
2 tbsp sugar free syrup (Torani Vanilla for vanilla icing)
6 tbsp butter, softened
Whipping cream

Put dry ingredients into a medium bowl and stir together. Add SF syrup and softened butter; beat with an electric mixer til smooth. Add whipping cream until frosting is the consistency you want (mine took about 1/4 cup.)

If the frosting “breaks” you can add more softened butter to it, a tablespoon at a time, beating after each addition until it pulls back together.

Here's what I did with Beeb's original recipe:

2 Tbs unsweetened Coconut (omitted this and add an extra tablespoon each of PP and almond flour instead)
1/8 tsp salt
1/2 tsp baking soda
1 tsp baking powder
1/2 cup sweetener of choice (I used Ideal Sweetener)(I used that too plus a smidge of NuStevia powder)

Wet Ingredients:

2 Large Eggs
2 Tbs coconut oil (I used melted butter)
1 tsp coconut extract (I added an extra tsp. vanilla extract instead)
1/2 tsp vanilla extract
2 Tbs DeVinci Coconut Syrup (I used Torani vanilla)
3/4 cup half and half or light cream (I used 1/2 cup vanilla almond milk + 1/4 cup cream)

I tinted the above icing a light green, then blended a tablespoon of granular erythritol with 1 drop each blue and yellow food coloring (cuz I was out of green!) and sprinkled on top. Kinda cute!

I'd definitely make these again. DH gets to jonesing for wedding cake sometimes and this will keep him on the straight and narrow LC path!

Char, I noticed that you used Ideal sweetener in the frosting. Where do you find this product? I've never heard of it.

Hi guys..

The texture of my cupcakes were like a wedding cake texture..quite moist. The batter was thickish..

I think I will cut back on the salt or the baking soda cuz they were a tad salty, though.

This would be very easy to do a plain vanilla cupcake OR almond flavored cupcake, I think. I got 6 big cupcakes out of this cuz I didn't want to start another pan..

I baked them for 25 minutes exactly.. One friend told me it's better to slightly underbake than overbake..
