Chicken Cakes with Pictures

Chicken Cakes


Ingredients:
  • 2 chicken breasts, shredded
  • 1/4 cup pork rind crumbs
  • 1/3 cup mayonnaise
  • 1 to 2 tablespoons onions, finely chopped
  • 1 tablespoon lemon juice
  • salt, pepper (to taste)
Preparation:
Mix ingredients and form into patties (I got 4). Heat oil in pan, then coat each patty with crushed pork rinds. Cook until outside crisp, turn and cook until other side crisp.

May 1 - 131 pounds June 1 - 126

October 8 - 123 pounds...back on Atkins until November 15th...that way I can pig out during the holidays (weeeeeeeee)

this is with PRE cooked chicken corect?

MMMMMM! Now if you mixed up some Best Foods mayo with some Chipotle Tabasco to top it with - that would be PERFECT!

I'll have to try this - I have some of that canned chicken from Costco and I bet this would work great.

awesome! i am so durned sick of cold chicken salad, but its what i make out of leftover baked or grilled chicken. never thought to patty and pan fry it. Yay!

5-24-10 Still going, the digital scale croaked (after 8 years of duty) so i have no idea how much progress i have made. Too busy to use ******, but according to family and wardrobe, i am slowly but steadily progressing toward my goal!

7-15-10. Got to use the scale in the building where hubby works, as of 2 weeks ago i weighed 248, Yay!

I baked 2 chicken breast, then shredded it in my food processor.
