Whey Psylli Pancakes

I'm posting this recipe here because I'd love to hear back from someone who's attempts this recipe to see if I'm crazy or does this actually taste as good as I think?!? It's great for those of us who do not readily have access to some of the low-carb baking aids like carbquik etc.

Also, what are others experiences working with recipes with psyllium husks?


Whey Psylli Pancakes

Recipe:
3 eggs
1/2 scoop chocolate protein powder
3 tbsp psyllium husks
1 tsp cinnamon
1/2 tsp cream of tartar
approx. 2-3 tbsp water

Add in all ingredients except the water, mix together until smooth, add in water to desired thickness of batter. Melt a little butter on a frying pan, over a medium heat. Spoon in some batter, flip after 1-2 minutes, cook another 1-2 minutes. I was spooning in two spoonfuls and easily made 6 pancakes.

Totals for the entire recipe using my protein powder was:
Calories 419
Fat 16.7
Protein 43.9
Carbs 38.8
Fibre 34.1

My powder is: Low Carb Series/Low Carb Protein by Interactive - 1 scoop is 30g 110 calories and 2 carbs.

Normally when I work with this powder there is a weird and often unpleasant aftertaste but with the pancakes there was NO AFTERTASTE!!!! The pancakes were so delicious and tasted just like whole wheat pancackes. I loved them and will definitely make them again. The carbs/fibre is almost all from the psyllium husks.

Charlotte, I printed the recipe and will try it soon with the ingredients I have. Do you think the chocolate protein powder is important to the taste? And why did you add cream of tartar?

Chocolate is all I had, I doubt the taste is important in the sense that I could not taste the pancakes as being chocolate. As for the cream of tartar, I added it as a just in case kinda thing to make sure they would rise. I'm going to try them tomorrrow without and see what happens.




I totally just realized that I also added in about a teaspoon of vanilla extract to the mix!

Yummy cept i used more ingredients and no phsylli but i did add flax. I dont think it needed it with vanilla protein powder though.

I tried them this morning. Used regular whey protein, baking powder instead of cream of tartar, and sweetened them. They were very good. The recipe made 4 big, puffy pancakes, which I had with butter. I will definitely make them again. I just want to see what the results are from all that pssyllium

I made these yesterday and again today. I don't have psyllium, so I used 2T ground flax. I also added some baking powder and a full scoop of protein powder. Yesterday I used strawberry protein powder and today I used vanilla. I also added a little Splenda. Mine ended up being thin... almost crepe-like. But, once they were stacked with butter and sugar free syrup in between, they tasted great!

I'm confused about where all the carbs come from, in this recipe. 38 grams minus 1 gram for your protein powder.... where do the other 37 grams come from? Is it just the psyllium, even though it's really only fiber?

I eat a tweaked version of these every morning as waffles. I don't count the psyllium carbs at all, as they are almost all fiber. I have had no weight gain (in fact, I am historically low) nor carb cravings. The only carbs I count are from the eggs, protein powder, cinnamon, and baking powder I use. My version comes to 3-4 carbs for the whole thing. My recipe makes two 12 x12 inch waffles, and I eat the whole thing.

I just bought psyllium and though it was to be counted as all carbs as well, so the carb count threw me off, I guess

And yeah.. I'd eat the whole thing too!

I had these for dinner and they were beautiful. I am a sucker for recipes with simple ingredients - and this is a winner.

Big, fat, fluffy pancakes. I loved the way the outside got crispy around the edges. The psyllium really makes this pancake recipe amazing, in my opinion.

I could only eat three, and I really should have stopped at number 2!

I had a low-carb tart orange syrup on mine, with some whipped cream to help them go down.

Not sure I can eat again for another 24 hours!

Psyllium Waffles
1/3 cup protein powder
2 T psyllium
1 t cinnamon
1/2 t baking powder
pinch of salt
2 beaten eggs
2 T Davincis of choice + water

Mix dry ingredients, Add wet ingredients. Add enough water to make a loose batter. Bake in waffle iron until done.

I eat the whole thing as a meal replacement. That's why I reduced the psyllium and increased the protein powder.
