Yummy Flax Seed Pancakes

I just ADORE these, I found the recipe someplace on the internet in one of my wanderings:

1 cup ground flaxseeds
2 tsp. baking powder
4 eggs
1/2 olive oil
Cinnamon (to taste)
Cloves (to taste)
Nutmeg (to taste)

I just throw everything into the mixer and turn it on, and then keep the batter in the refrigerator.

that looks really easy. do they fry up nice and crispy or are they a bit on the rubbery side?

5-24-10 Still going, the digital scale croaked (after 8 years of duty) so i have no idea how much progress i have made. Too busy to use ******, but according to family and wardrobe, i am slowly but steadily progressing toward my goal!

7-15-10. Got to use the scale in the building where hubby works, as of 2 weeks ago i weighed 248, Yay!

nice idea. I don't go for olive oil in things like this. I suppose if you get one of those that have the taste removed it wouldn't matter, but don't use extra virgin. *wrinkling my nose* Unless you wanted to nix the spices and put in a little garlic, then they might be nice as side dish with meat.

What do you top these with? I have some golden flax meal I just purchased, I may try this recipe with it and see how they turn out. I would sub CO for OO.

Is it 1/2 cup of the oil? That seems like a lot for a pancake recipe.

I top mine with sugar free hungry jack or sugar free log cabin maple syrup
November 1 - 165 pounds December 1 - 152 pounds
January 1 - 148 pounds February 1 -143 pounds
March 1 - 141 pounds April 1 - 137 pounds
May 1 - 131 pounds June 1 - 126

October 8 - 123 pounds...back on Atkins until November 15th...that way I can pig out during the holidays (weeeeeeeee)

Where do you get the sugar free maple syrup? Do you buy it online or can you actually find it in the stores?
