Cornbread!!!

I'm from the south, I live in the south and we LOVE our cornbread.

Unfortunately, it's one of the worst things you can eat for weight control.

Anyway, I experimented with a recipe this afternoon and it turned out SO good!!

LC cornbread (1 serving)
1/3 cup crushed plain pork rinds
2 T flax meal
1 t. baking powder
1/4 cup egg substitute or one beaten egg
enough half and half to give the mixture a cornbread batter consistency - medium, not too dry, not too wet.

Mix with a fork and pan fry in oil or with pam. Mmmmmmmmm!! It was SO good!

No, just regular Hodgson Mill flax seed (ground). I wish I'd taken pix! Maybe I'll just have to make some more this weekend so I can send you a picture.

oh gosh...i have been craving cornbread, and i can't find hazelnut flour anywhere...

Chanty, if you have a Central Market in your area, they sell the hazelnut flour in their bulk bins.

I just checked the info. for Bob's Red Mill. It's only 2 grams net for a 1/4 cup serving.

Nope - you aren't dreaming.

Chanty asked about hazelnut flour and I gave her a suggestion and we totally threadjacked..... Sorry everyone!!

There are a few other cornbread recipes around that use hazelnut flour instead of the flax. That's probably how it all got started.

I bought the stuff yesterday to make this. I have to make some soup first so I have something to dip it in. Does this quantity of ingredients make just 1 big cornbread pancake thingy?

I got 4 smaller cakes out of it. (about the size of half a deck a cards each cake) probably had a little extra pork rinds in it though.

I made it last night. It didn't really taste like cornbread at all, I tried to use my imagination. Maybe if I had some soup to dip it in. I do want to make a grilled cheese with it though when I do make the soup so I'm keeping the recipe.
