can anyone point me to this recipe? someone mentioned that it is great!

Here ya go. I love it, eat it a lot!!

CHERI'S CREAMY SOUTHWESTERN TACO SOUP
1 pound ground beef
2 3/4 ounces onion, chopped, 1/2 cup
2 cloves garlic, minced
1 tablespoon cumin
1 teaspoon chili powder
8 ounces cream cheese, softened
2 10-ounce cans Ro-tel tomatoes, undrained (tomatoes with green chilies)
2 cans beef broth
1/2 cup heavy cream
2 teaspoons salt, or to taste

In a large soup pot, brown the ground beef with the onion and garlic; drain. Add the spices and cook a couple minutes. Drop the cream cheese in bits into the meat. With the back of a big spoon, smash it into the meat until no bits of white remain. Stir in remaining ingredients and heat through.

Makes 8 cups or 6-8 servings
Freezing not recommended

Per 1/6 Recipe: 361 Calories; 29g Fat; 18g Protein; 7g Carbohydrate; 1g Dietary Fiber; 6g Net Carbs
Per 1/8 Recipe: 271 Calories; 22g Fat; 13g Protein; 5g Carbohydrate; 1g Dietary Fiber; 4g Net Carbs

Adding here is the link to her soup on LCF. She has added a couple of variations to the recipe like adding chicken instead of hamburger. Both are very good.

Based on the ingredients how long do you think this would last in the fridge? I would be the only one eating it so don't' want it to spoil before its finished.

If you wanted to extend its lifespan (based on the ingredients) just don't add the cream cheese and hvy cream, the ratio seems to be simple enough you could eyeball adding those 2 things when you reheat.
By the same token even tho freezing is not recommended (due to the cream cheese and hvy cream methinks) you could portion out the meat mix into freezer bowls and so on.

This is good soup! I've made it several times. I usually use chicken broth rather than the beef. I tend to have the chicken on hand, and don't always the beef. Plus I think it makes it a little richer tasting.
Linda, You can also just make half the recipe! Pretty easy to halve.

I made it last night using baked, shredded chicken breast and replacing the beef broth with chicken broth...it was fabulous.

We love this soup. I add more veggies sometimes like zucchini and collards but just by itself it is really good. I wish I had remembered we can take those 3 gram tortillas, cut them in strips and fry them to eat with out soup. I think they would taste good. Especially the tomato and basil one.

Excellent Low Carb Soup!

My husband loves this soup! We add a can of Eden's Black Soybeans (drain the beans first). The beans make it even better! Even with the soybeans, it is still low carb. Try it, you'll like it. Thanks for posting the recipe.[/I][/B]
