Coconut Flour Banana Nut Bread

I started with a recipe for Coconut Bread by Becky that I found here. I realized that it really reminded me of pound cake, so I sweetened it with Sweetzfree and Erythritol. That came out pretty well, especially after I dropped the salt included with the original recipe.

Last night, I decided to mix one up for today and at the last second decided to add some banana extract and chopped pecans. OMG! It turned out SO yummy! Here's the recipe:

Coconut Flour Banana Nut Bread

6 large eggs
1/2 cup butter, melted & cooled a bit
3/4 cup coconut flour
1 tsp baking powder
23 drops Sweetzfree
2/3 cup granulated erythritol
3/4 tsp. banana extract
chopped pecans

Mix all ingredients well and pour into a greased loaf pan. Bake at 350 for 40 minutes.

I think this is absolutely the best "bready" recipe I've tried and I think anyone would like it.

Yay, sounds wonderful. Was the erythritol powdered or granulated?

I went back and edited the recipe to say that.
