German Faux Potato Salad (hor or cold)
This is one of my favorite hot tater salads. I made it tonight with 2 big turnips and halved all the ingredients. I served it hot and it was very good..
4 large turnips, chopped into chunks and
boiled in water with some cream added until
3/4 cup of chopped onion
8 whole slices of bacon, diced
2 T flour (I used flour instead of other thickeners)
1/2 cup Splenda
2 T. butter
1/2 cup cider vinegar
1 cup water
1 cup sour cream
fresh chopped parsley (1/4 cup)
1 1/2 tsp. salt....1/4 tsp. pepper
As you are boiling your turnips...In a large skillet start cooking the bacon. When you get some "grease", add the chopped onion and let it all cook together. When the bacon is done and the onion soft, remove the bacon.
To the bacon grease/onion mixture add the flour and stir, then add the butter, Splenda, vinegar and stir until smooth. Add the water and cook until
thick. Remove from the heat and add the sour cream and stir.
Drain the turnips and place in a bowl and pour the sauce over the turnips and mix in diced bacon and parsley.
Pam a casserole dish and place the salad in the casserole and bake at 350 for an hour. You can also put this in a crockpot on high for 3-4 hours.
You can serve this hot or refrigerate it and serve it cold.

I love hot german potato salad (with bratwurst!). Thanks for this recipe, it's been years since I've had it!
