What are oopsies? I've seen them in several post and searched the recipe board and could not find it.

Oopsies are basically an egg-based bread substitute

Oopsies are a variation of the "Revolution Rolls" first published in one of the early Atkins books. I personally didn't care a whole lot for the original recipe as I felt it was a bit too plain tasting. But it's very versatile and easy to tweak to make sweet or savory dishes by adding flavorings, spices or sugar substitutes. If you are watching your calories, you can eliminate the egg yolks and whip up egg substitutes or just the whites if you wish, and use low-fat cheese.

Here is the originial recipe. You'll find lots of other things made with these on her site too.

They are the best bread substitute in the universe, IMHO. Easy to make, cheap, infinite variations. Perfect for burgers, sandwiches, and any flattish ones can be used as pancakes.

Two large oopsies are basically one egg + 1 oz. cream cheese, so very low carb.

Right now I have oopsie blueberry "muffins" in my kitchen, along with oopsie dinner rolls (for barbeque sandwiches) and flax oopesies for fast-food burgers. I even have a few oopsie "donut holes" with chocolate glaze left over. Oopsies rock!!

Jamie van Hooten of Low Carb Examiner (aka Cleochatra) invented these, and we owe her bigtime!!

You can also use them as a pancake substitute. Very yummy with some butter and SF syrup.
I've also done chocolate chip cookies with them, a splenda/cinnamon oopsie, garlic cheese oopsie - the possibilities are amazing!
