Smothered Steak

Anyone have any recipes for classic smothered steak? Would like recipes using either ground beef or regular steak. I love hamburger steaks smothered in onions, etc.; but have never made them at home before. Any suggestions are appreciated. Thanks

Start Date: 1st time 1998: 2nd time 2006 (back to basics)
Smoothered Chicken, Cube Steak or Hamburger

1. Pre-heat oven to 350 degrees. Melt butter and olive oil in fry pan.
2. Brown chicken or steak or burger on both sides (just until browned).
3. Transfer meat to shallow baking dish and put in oven while you do the following:
4. Saute sliced mushroom and onions in the same pan you browned the chicken/meat. (I can do 4 pieces with 10 oz. of mushroom slices and 1 large onion.) Add more butter/oil if necessary. Cook until tender.
5. Add 1/4 cup dry white wine, 1/4 cup water and 1 t. soup base mix. Cook until the liquid is reduced.
6. Remove the meat/chicken from the oven. Spoon the onions/mushroom over top of each piece and top each with a slice of swiss cheese. Return to the oven.
7. Bake about 10-15 minutes more until the cheese is melted and browned to your liking. EASY and one of our favorites.

Oh my, that recipe sounds awesome ! What type of soup base are you tallking about, something like boullion granules are something different ?

You could use bouillon. Look in the soup area of the grocery for soup base. There are several different brands. It comes in a can or round plastic container. It is similar to bouillon but I think richer. (I learned about it from my neighbor who makes a lot of soups.)

The soup bases I like best are Better than Boullion or L.B. Jamison. The BTB is the best - moist and must be kept in the fridge. Actually tastes very much like homemade. LBJ is good - dry and can be kept in the cupboard. The recipe sounds very good.
