LC Hot Pumpkin Cereal!

ok so I kinda just tweeked another recepie on here to make this.. BUT for all my fellow pumpkin lovers, this stuff is AMAZING (to me and family anyway lol)

its a cross between cream of wheat, and cottage cheese in consistency..

ok this is how I made it..

in a small soup pot (think like the size that holds one can of soup)

I put a tablespoon of coconut oil and butter. (you could use just butter I use both for the health benefits)

then in a bowl I mixed:

1T heavy whipping cream
2 HEAPING TABLESPOONS of canned pumpkin (not pumpkin pie mix)
couple of sprinkles of nutmeg and cinnamon
dribble of vanilla extract.
you could either now add sugar free syrup (caramel, vanilla, and cinnamon dolce are very good) or splenda or stevia to make it a little sweeter..
then after thats all wisked together wisk in :
2 eggs
I wisked that very well together untill it looked like pumpkin pie filling raw..
then heated up the pot untill butter was melted.
I think the wisk is a huge key to this becuase it covers so much area in the small pot, and when wisking fast you get just the right texture, Vs using a fork or a spatula..
Its about done when it looks like very thick cottage cheese and it starts to stick to itself..
I then poured this in a bowl, topped it with another sprinkle of nutmeg and cinnamon, 2 T heavy whipping cream, and a little squirt of sugar free maple syrup...

ENJOY! this is amazing imo..
Very Very Very filling!
this will be great on cold snowey days!

sounds delicious. I will try this but will use pumpkin pie spice. I wonder how many carbs? I guess it would be pretty much just the pumpkin that would be the most. 2 tablespoons cant be that much

Im gussing that maybe say 2 carbs for the pumpkin and maybe 4 carbs for the maple and the cream.. so 6 carbs at most.. and thats if you can finish the whole bowl..

Wonder if I could get away with cooking this in the microwave....I like to take my breakfast to work with me and cook it there, so it's hot and fresh. I'm not picky about consistency, so if the flavor was the same, even if it didn't come out exactly the same consistency, it might work for me. Also, I bet it would work just as well with butternut squash.

Yes I microwaved it every morning at work. Mix about 1/2 way through cook time.

Yes, you can. I make a hot cereal similar quite similar to OurLuvs' recipe (but not using pumpkin most of the time--just cream or almond milk) in the microwave. You just have to watch it carefully the second minute and whisk it in 10-15 seconds intervals.

It's in the 30's here this morning, so I made this for breakfast. I loved it! I used French Vanilla Davinci's in place of the vanilla and sweetener. I too, ate the whole thing. I figured mine as pumpkin 4 net carbs, eggs 1 net carb, cream 1 net carb, so 6 is about right. I'm just waiting to see how much staying power it has before I decide whether or not to eat it on a work day!

Thank you for sharing this recipe. I didn't know what to have for lunch today, saw this and tried it. Was fantastic!! I made it in the microwave and added my 1 TBL coconut oil when it was done. What a way to get it in! Thanks again!

I can see how it will be very filling. I guess it's the fiber in the pumpkin.

I have to revise my assessment of this in my own eating plan.

It is now a confirmed fact that dessert-like breakfasts do not sit well with me. I was jonesing and headachy, with that tingling in the tip of the mouth and behind the teeth that says "EAT CARBS."

Eggs and bacon tomorrow. Fo sho!

Still, I thought the recipe was delicious, and it would make a very good afternoon snack or light supper.

The recipe doesn't have protein. If you added some protein to your meal, you might not have the side effects you noticed.

I made a version of this - sorta :blush:

Looks and taste like mush but it's warm and filling

about 1/3 c. cottage cheese
about 1/4 c. canned pumpkin
cinnamon, ginger, cloves
1 & 1/2 T. unsweetened coconut
1 T. chopped nuts (or seeds)
splenda to taste

warm in the microwave for about 25 seconds and eat!
