Crack Slaw - Thai Style

I was running through recipes trying to decide what to have for dinner and I found a Thai Crack Slaw recipe I've made in the past. Ok, originally, it was meant to serve over rice, but it makes a great Crack Slaw!

1/4 cup thinly sliced green onion
1 teaspoon minced garlic
1 lb lean ground beef
1 teaspoon red curry paste
1/2 cup tomato sauce
1/4 cup light coconut milk
1 tablespoon sugar free honey
1/4 teaspoon grated lime rind
1 1/2 teaspoons fresh lime juice
1 tablespoon fish sauce
about 1/2 head of cabbage, shredded

Heat a large skillet or wok over medium-high heat. Add a touch of oil (I use peanut oil - about 1 Tablespoon for lean ground beef). Add the ground beef and cook about 7 minutes or until lightly browned and starting to crumble. Throw in the garlic and cook about 30 seconds, then add the green onion and cabbage (I also sometimes add some red pepper). Cook about 3 minutes until cabbage is starting to wilt, then stir in the curry paste and tomato sauce. Cook until about half of the liquid evaporates. Add coconut milk, honey, lime juice and peel and fish sauce (or can use soy). Cook about 2 -3minutes or until slightly thickened. Eat.

Boy that sounds GOOOOD! I bet it would be good with fresh ground pork or turkey in place of the beef too.

Oh my gosh!!! I just got done making the original Crack Slaw, which DH and I loved. Now I'm going to have to make this one too!! Sounds wonderful!!!

I just made a regular crack slaw, and I thought it might be good with curry instead of the other stuff. So I googled, and this thread came up! I think I'm going to give this a try next time

They carry it in Walmart, if you can tolerate maltitol. Netrition carries a couple of brands, one with xylitol. I use the Walmart brand because I use the honey in such small amounts, it doesn't bother anyone. Also Birgit has a recipe for SF honey on her website.

I made this for dinner last night - it's a keeper! I added some julienned red bell pepper and sliced mushrooms for a bit more texture.
