Cole slaw?

so I know cole slaw is made from cabbage and mayonnaise and some other mysterious ingredients. I don't know much about it but I know I like it...but is it low carb or can it be low carb by tweaking ingredients of a recipe? I wonder if the store bought kind will suffice or if it can be made a lot healthier homemade. Any suggestions?

I have the best coleslaw recipe in the world..

Store kind stinks.

Try this:

One bag of shredded cabbage
one green pepper, diced
1/4 of an onion, grated into the slaw

Put these ingredients into a large bowl

Dressing:
8 ounces of mayonnaise
1/3 cup of vinegar
1/3 cup of Splenda

Mix this in small bowl and pour over the coleslaw and mix.

Now, if you think it is a bit dry, add a bit of oil to the slaw..

This makes a big bunch for about 8 people. Taste the dressing before you pour it over the coleslaw. It should be sweet/sour..

I found it too sweet, though, and have decreased the Splenda to 2 Tablespoons.

I make my own...no real measurements, but I mix some brocoli slaw with shredded cabbage and chopped celery. My dressing is Good Seasons Italian, a little extra red wine vinegar and some splenda. It's very good!

Here is the one I make:

Waldorf Cole Slaw

1/2 cup sour cream
1/3 cup heavy mayonnaise
1/3 cup sugar substitute (recommended: Splenda)
1/2 cup shelled walnuts, coarsely chopped
2 tablespoons red wine vinegar
12 ounces white cabbage, shredded
4 ounces red cabbage, shredded
1 teaspoon kosher salt
1/8 teaspoon freshly ground black pepper
1/4 teaspoon ground nutmeg
In a large bowl, mix all ingredients, tossing to combine. Chill for 2 hours before serving.

Yield: 10 servings

Nutrition Information
Nutritional Analysis per Serving
Calories 129
Total Fat 12 grams
Saturated Fat 3 grams
Carbohydrates 5 grams
Net Carbohydrates 3 grams
Fiber 2 grams

I believe it was from George Stella, but don't remember..... and I use the bagged shredded cabbage.....

I ended up combining a couple recipes...first I used one that called for only vinegar, splenda, and celery seed but I need that creamy consistency so I added mayo. The recipe called for a whole cup of splenda and that turned out way too sweet and i like cole slaw that is sweet but also has a spicy kick so I added a couple teaspoons of spicy mustard. Turned out good but the cabbage deflated with all that liquid so there is way too much "sauce" that is kinda overpowering. I need to add a whole other package of cabbage to soak up all the juice!

I made a really good cole slaw tonight, so I thought I'd share my recipe:

10 oz shredded cabbage
1 red bell pepper
1 small onion
1/2 C mayo
1/2 C RF sour cream
1 teaspoon balsamic vinegar
1 packet of Splenda
celery salt, to taste
black pepper, to taste

DH and I ate the entire batch! :blush:
