LC Graham Crackers

LC Graham Crackers (yeild 9 crackers @ 1.5 carbs each)
*This will make a great crust*

1 1/2 cups lc cake and cookie flour mix (carbquik version)
1/4 tsp salt
1/4 tsp baking powder
1/4 tsp cinnamon
3 T butter flavor crisco
1/4 cup Monin sf vanilla syrup

Combine dry ingredients well.
Cut shortening into flour then add syrup and mix just until dough comes together.
Do not overwork the dough.
Form a round, cover with plastic wrap, and chill for approx. 1 hour.
When chilled roll out a square between parchment to 1/8 inch thick.
Cut rectangles (approx 2 1/2 x 4) with pizza cutter or knife.
Place on a lightly greased cookie sheet and prick each several times with fork.
Bake in a 375 degree preheated oven for 10 -13 min or cracker are golden brown.

Kevin,

As always your baking looks awesome. Can I use another brand of the sugar free syrup or is Monin the best to acheive this? Is it like DaVinci ?

I supose davinci would work also. I will have to try that the next batch I make.

Graham Crackers

Kevin,
These look very easy to make. I think I'll give it a go. Need to bake
something for my Knit Wits (we knit layettes for the Marine base)
Lottsa babies every year. Anyway I will make them and perhaps layer
them with pudding and whipped cream. Thanks again for making our
LC life so comfortable and exciting.

I am never sure how to answer these type of questions Tweak. If you are asking me do these taste exactly like nabisco honey maid grahams I guess I would have to say no. If you are asking could anybody taste a major difference from the real thing if you used them to make a graham cracker crust I would also have to say no. The taste is slightly less sweet than the real thing by design but the texture after being completely cooled is right on.

I did make a batch of these today and they really are very graham crackery!

The only thing I did differently was that I used 1/8 s.f. honey and 1/8 cup vanilla syrup rather than 1/4 cup syrup. That little difference really made them like a Nabisco Honey Maid cracker Kevin.

My only words of caution are don't roll too thin and watch closely, they turn from golden to over-cooked in a flash.

1/4 tsp splenda quick pack

3 T butter flavor crisco
1/4 cup Monin sf chocolate syrup

Combine dry ingredients well.
Cut shortening into flour then add syrup and mix just until dough comes together.
Do not overwork the dough.
Form a round, cover with plastic wrap, and chill for approx. 1 hour.
When chilled roll out a square between parchment to 1/8 inch thick.
Cut rectangles (approx 2 1/2 x 4) with pizza cutter or knife.
Place on a lightly greased cookie sheet and prick each several times with fork.
Bake in a 375 degree preheated oven for 10 -13 min or cracker are golden brown.

I am going to try these chocolate ones to make to make the crust for a frozen mocha cheesecake loaf and see how it turns out.

I've been thinking about making a crust with the regular grahams but the chocolate version would be great. Kevin, I assume you will pre-bake the crust using either cracker, about how long would you recommend? Also, if using a recipe that the filling requires baking, would you pre-bake and then bake more when adding the filling of just add the filling and bake?

Frozen Mocha cheesecake with chocolate graham cracker crust - yummo, can't wait to see that one!

I tried my hand at some snack grahams today using my new mini cookie cutters.

I got 10 dozen crackers @ 1 carb for 8 crackers.

1 1/2 cups lc cake and cookie flour mix (carbquik version)

1/4 tsp baking powder
1 splenda quick pack
3 T butter flavor crisco
1/4 cup Monin sf caramel syrup

Combine dry ingredients well.
Cut shortening into flour then add syrup and mix just until dough comes together.
Do not overwork the dough.
Form a round, cover with plastic wrap, and chill for approx. 1 hour.
When chilled roll out a square between parchment to 1/8 inch thick.
Cut out crackers.
Place on a lightly greased cookie sheet and prick each several times with fork.
Bake in a 375 degree preheated oven for 10 min or cracker are golden brown.

You could use some of those little heart shaped cookies to decorate a Valentine's dessert! I really like the "graham fish" too!

This probably sounds a bit whiney, but please tell me Kevin's Carbalose or newest version of his Bake Mix is ok to use making these? Has anyone used it for the graham crackers?
